การพัฒนาผลิตภัณฑ์ขนมสำปันนีโดยใช้แป้งข้าวลืมผัวทดแทน แป้งมันสำปะหลังบางส่วน
This research study the purposes of the research are to : 1) To study the recipe and process of making Sampanee dessert. 2) To study the preparation of leumpua rice flour for the partially substituted of flour in Sampanee dessert. 3) To study the use of leumpua rice flour for the partially substituted of flour in Sampanee dessert. and 4) To study the storage time of the quality of Sampanee dessert replacement products with leumpua rice flour. A study of Sampanee dessert by using leumpua rice flour to partially substituted of flour. Found that the most appropriate formulation. Formula 1 consists of 2 5 0 grams of tapioca flour 2 0 0 grams of sugar and 3 6 0 grams of coconut milk. The average score was acceptable in all aspects such as color flavor texture overall taste and appearance. The average score was 7.90 8.00 8.30 8.40 8.20 and 8.10 respectively. Due to the texture and smoothness of the two formulas then the leumpua rice is forgotten by the process of flour. The use of modern tools will shorten the process time. It also helps to make the flour more effective. Is a resolution And dry without moisture which is the source of molds. Bring leumpua rice flour to partially substituted of flour in the Sampanee dessert. It was found that Sampanee desserts using leumpua rice flour to replace the flour in some parts. At the replacement rate of 15 percent or formula 1 was the most accepted in terms of color flavor texture overall taste and appearance. The average scores were 7.00 7.60 7.70 7.10 7.73 and 7.40 respectively. Because the desserts is the least change. Consumption Study Results In Sampanee dessert Partially Substituted Flour with Leumpua Rice. It was found that the acceptance of 95% of the products gave an average score of 7.74 at the high level of liking. And according to Thai dessert community product standard. Sampannee Partially Substituted Flour with Leumpua Rice Can be eaten when stored at room temperature. The shelf life should not exceed 1 week.
The objectives of this research are to propose an efficient and proper model that fits the cassava and rubber yields data. A generalized estimating equation (GEE) and a linear mixed model (LMM) with spatial correlation following the conditional autoregressive model (CAR) were adopted. The dependent variables are the cassava and rubber yields collected each month in every province of Thailand. The factors considered are rainfall averaged temperatures and regions. The results from GEE and LMM show that the factors influencing on the cassava and rubber yields are rainfall averaged temperature and region. Both GEE and LMM fit the correlated data. The GEE is used to explain the influence of factors on the yields in all provinces while the LMM is used to explain the influence of factors on the yields in each province.

This research aims to develop the concrete blocks mixed with cassava pit waste. There are 6 mixing ratios among Portland cement type1: rice hush ash: quarry dust: cassava pit waste: water reducer type A: tap water that include 0.7: 0.3: 10: 0: 0.02: 0.6 0.7: 0.3: 9.9: 0.1: 0.02: 0.6 0.7: 0.3: 9.7: 0.3: 0.02: 0.6 0.7: 0.3: 9.4: 0.6: 0.02: 0.6 0.7: 0.3: 9.1: 0.9: 0.02: 0.6 and 0.7: 0.3: 8.8: 1.2: 0.02: 0.6 by weight. The concrete block samples were casted same as the ordinary concrete blocks and test were conducted according to TIS.57-1990 standard. From the results the best proportion of concrete block mixed with coconut shell ash is 0.7: 0.3: 9.7: 0.3: 0.02: 0.6. The proper ratios of cassava pit waste can decrease the density or weight and increase the thermal insulation of concrete blocks. However the over amounts of cassava pit waste that effected to increase the water absorption and decrease the compressive strength properties of concrete blocks.

The development of filling dessert from Cassava in bakery products. The bakery products to use in this research are 4 products such as choux cream bread puff pastries and Danish pastries. The use of cassava to develop choux cream can be used at the maximum amount of 60 percent. For the filling bread can use cassava up to 60 percent. Puff pastries can be used to make up to 30 percent cassava and Danish pastries can use cassava to develop as filling by up to 50 percent. Which the filling of all 4 bakery products developed using cassava The highest liking scores were not different from the control samples. It also results in coarse fiber content. And ash increases If increasing the amount of cassava it will affect the quality of the filling of bakery products in terms of color and acceptance. However the effects of cassava preparation should be studied using other methods. To help improve various qualities of filling bakery products or other products to have the potential to be a new food product and is a health product. Consumer acceptance test in The development of filling dessert from Cassava in bakery products for 100 tester found that most testers are more than 95 percent acceptance in the product of The development of filling dessert from Cassava in bakery products. For the Technology propagation of The development of filling dessert from Cassava in bakery products project at the Faculty of Home Economics Technology. All participant are most satisfied in all aspects of Technology propagation. According to the research results the maximum enhance can be at 30-60%. Increasing the replacement amount will have an effect on the appearance value. And color features as well as satisfaction with the sensory characteristics. Therefore additional production methods should be studied in order to make the filling more appetizing Which may be good for the development of high fiber diet products to help improve the sensory characteristics in which these characteristics affect product acceptance.

The purpose of this research to study the process of destruction of cyanide in cassava. Prior to use in product of Thai pastes and study use of cassava in Thai pastes production of 4 types in tha dang pastes roasted chili paste lohng reuua paste Tamarind chili paste. study physical properties and chemical properties of product and consumer test studies in cassava products affective. in order that transfer technology of development products to the community. The study process to destroy cyanide in cassava before to use in products of pastes. The steaming process in cassava is the low dose of cyanide 18.9 ppm. Studies using cassava to produce 4 types of pastes. The average score of tha dang pastes supplement of cassava 15 percentage in terms of appearance color taste texture and overall liking. The average score was 7.20.7.30.7.00.7.20 and 7.50. This is a preference at a moderate level. Sensory evaluation of roasted paste supplement of cassava 40 percent in terms of appearance color taste texture and overall liking. The average score was 7.86 8.05 7.79 7.86 7.71 and 7.79 This is a preference at a moderate level. Sensory evaluation of lohng reuua paste supplement of cassava 10 percent in terms of appearance color aroma taste texture and overall liking. The average score was 7.30 6.70 7.00 7.50 7.30 and 7.25. This is a preference small and medium-like. Sensory evaluation of tamarind paste supplement of cassava 20 percent in terms of appearance color aroma taste texture and overall liking. The average score was 7.40 7.15 7.15 7.20 7.20 and 7.50. there is a preference moderate inclination. When all 4 types of products were tested for physical chemical and microbiological. we found increasing the amount of cassava in products has affect the color of the products and increase of fat and fiber in the products. All 4 types of cassava products of biomass are no harmful by Thai Industrial Standards Institute. The study on consumer acceptance of the products cassava paste the 4 types. The consumers test responded to the questionnaire were female. The age of the respondents is 21-30year and occupation of the respondents are students. Most of the revenue will be at 10001-15000 baht. The consumers liking the product in rate like very much to like most and accept all 4 types of cassava products. Most consumers buy for storing themselves including buying as souvenirs. The price of products in consumers agree on the price of 35 baht.
