การพัฒนาผลิตภัณฑ์เนื้อสัตว์เทียมจากถั่วเสริมรากบัว
The objectives of this study were 1) to study the basic formula of Bean-Based Meat Analogue Products Supplemented. 2) To study the appropriate amount of lotus root utilization as supplementation in bean-based meat analogue products and to study the nutritional value of bean-based meat analogue products supplemented with lotus root. 3) To study the acceptance of bean-based meat analogue products supplemented with lotus root. 4) To study the consumer acceptance of bean-based meat analogue products recipes supplemented with lotus root. The results showed that the basic formulation of bean-based meat analogue in the recipe 2 which contains 50 grams of soybeans 60 grams of green peas 40 grams of white beans 10 grams of shiitake mushrooms and 5 grams of beetroot was the most accepted by 5 experts. The results of sensory evaluation showed that lotus root supplementation in a 10% bean-based meat analogue formulation was statistically significantly higher than that of 5% 15% and 20% lotus root supplementation (p≤.05). The results of the calculation by software package showed that the amount of dietary fiber in the basic formula was 15.56 gram which was lower than the formula that supplemented with lotus root. The amount of protein in the basic formula was 41.40 grams which was lower than the lotus root fortified formula. The results of a consumer acceptance test of 30 people using the 9-Point Hedonic Scale rating method showed that the majority of consumers liked the shape and color. As for the taste smell texture and overall liking it was at a moderate level of acceptance and 93.33% accepted the bean-based

The potential development the of processed meat products enhancing pineapple pulp left by juicing. Pattawia pineapple pulp used in research. Boil to extract the acid and sugar. The pulp looks like fresh pulp light yellow. The processed meat products used include coarse ground pork sausage pork ball and Moo Yor. Pineapple pulp supplementation in coarse ground pork sausages could be supplemented by up to 15 percent. Pork balls can be supplemented up to 20 percent and Moo Yor can be added up to 10 percent. The addition of pineapple pulp to processed meat products resulted in an increase in crude fiber content in all 3 processed meat products. At the same time resulting in light processed meat products and has a reduced texture characteristics score which affects acceptance. Consumer acceptance test in The potential development the of processed meat products enhancing pineapple pulp left by juicing for 100 tester found that most testers are more than 95 percent acceptance in the product of The potential development the of processed meat products enhancing pineapple pulp left by juicing. For the technology propagation of the potential development the of processed meat products enhancing pineapple pulp left by juicing in faculty of Homes Economocs Technology the participants were most satisfied with all aspects of the technology propagation.

Tis research had the following objectives to study 1 production of crispy baked fibrous covering jackfruit meat 2 production of snack from crispy baked fibrous covering jackfruit meat 3 acceptance of snack made from crispy baked fibrous covering jackfruit meat by evaluators 4 storage time of smack product in room temperature. When fibrous covering jackfruit meat when baked at 70 80 and 90 degrees Celsius for 100 minutes evaluators accepted snack baked at 90 degrees Celsius by the best all around score at statistically difference (p ≤0.05). ln studying sweetness by using three levels of sugar at 50 60 and 70 grams. Products with 60 and 70 grams of sugar received same score. The amount of sugar at 60 grams was used. ln studying Amount of fibrous covering jackfruit meat at 20 25 and 30 gram iT was found that 25 Grams of fibrous covering jackfruit meat received the highest score. ln forming the shape of the snack the use of only fibrous covering jackfruit meat could not be formed into any shape. Pressed rice ba-sae and pressed rice were used. The pressed rice helped ingredients formed into shape. The temperature used in baking the product at 70 80 and 90 degrees Celsius were used. The higher temperature lessened time of baking. 90 degrees Celsius were used to bake the snack for 20 minutes. This product was accepted by evaluators at acceptance test using differences at statistically difference (p ≤ 0.05). when studied storage time by keeping product 2-4 weeks at room temperature vacuum packed. Free water and the yeast and mold amount wrer tested every 10 days. During 0 to 16 days no yeast and mold wrer found. The moisture level was 0.58. On the 17 th day mold count increased to 700 (CFU/g) and the moisture content increased. Therefore fibrous covering jackfruit meat product can be kept 16 days.

The research objectives were (1) to study its traceability system and (2) study the relationship model of on the traceability process of the meat processing industry in Thailand to support the ASEAN Economic Community and (3) to determine the consistency of the empirical data. The variables used in this study were the transformation process as the independent variable; the supply chain production process and the certification process as the mediator variables; and the animal disease control traceability and supply chain of Halal meat-processing industry in Thailand to support the Economic Community Asia as dependent variables. Qualitative and quantitative mixed methods study was applied using the questionnaires to collect data from 510 meat sample operators in Thailand. The statistical methods used to analyze data were the frequency percentage average value standard deviation and structural equation model. The results revealed that the model was well consistent with the empirical data. Chi – Square (χ) value was 288.297 at the degrees of freedom (df) of 256 with the probability p-value equal to 0.081 and chi - square relative (χ22/df) of 1.126. The index of harmony (GFI) was equal to 0.965 and modified harmony index measuring (AGFI) was equal to 0.933 and the index measuring the comparative (CFI) equal to .965 with the accuracy in estimating the parameters (RMSEA) equal to 0.016. In addition the quality of transformation process the supply chain production process the certification process and the animal disease control traceability directly influenced on the traceability process of in the supply chain of Halal processed meat industry in
