Development of Bakery Products from Rice Bran and Rice Processing Wastes to 1. Develop bakery products from rice bran and wastes amount 4 types 2. Study the formulas and processes of food production from rice bran and wastes for the appropriate 4 types 3. Study consumer acceptance of food products from rice bran and wastes in 4 types and 4. Transfer technology of bakery products from rice bran and wastes in 4 types to the community After that the storage life of each condition will be studied from 0-10 days and the physical properties are compared. Chemical and microorganisms such as pH value color measurement and total number of microorganisms found that Khanom Jeen noodles stored in modified atmosphere conditions have longer shelf life than those stored. At normal atmospheric conditions and vacuum conditions. Chemical analysis results showed that the bakery products decreased their pH over time. With values between 4.31 ± 0.00 and 2.99 ± 0.01 and bakery products Stored at 100% carbon dioxide (CO2) modified atmosphere packed in a sealed nylon / PET vacuum plastic bag. Store at room temperature. Can be stored for up to 10 days and found that the total number of microbes increased when the storage life is longer But not over the standard of community products (PhorChor. 500/2547 Knmhin) so the products are safe and not harmful to consumers. Consumer test results show that consumers like and are interested in buying bakery products that use 100 percent carbon dioxide (CO2) at 75 percent.

Abstract Milk ice cream is the one of most popular dessert in many countries. But the most milk ice cream contain high amounts of sugar and fat. It is for this reason that consumers who exercise regularly concern about the impact of ice cream consumption on health and have led to a considerable rise in high protein and low sugar ice cream demand for this consumer group. Therefore the objective of this study was to develop the reduced energy milk ice cream by using chicken breast and inulin. Milk ice cream was supplemented with chicken breast at 5 10 and 15% by total weight. The result showed that 10% chicken breast ice cream was highest score of sensory evaluation. Sugar was substituted with inulin at 25 50 and 75% by weight. The result showed that the replacement of sugar with 50% inulin was suitable for ice cream. The chicken breast ice cream with inulin formula were determined the physical properties. The result showed that viscosity overrun texture and melting rate of the developed formula were 147 cps 41% 11780 g force and 6% respectively. The lightness (L*) redness (a*) and yellowness (b*) value were 88.68 4.60 and 19.11 respectively. The proximate compositions moisture and protein content of the chicken breast ice cream with inulin formula were 68.03 and 11.79% higher than basic formula whereas fat and ash content of the chicken breast ice cream with inulin formula were 6.02 and 0.45% lower than basic formula. Microbiological quality of the chicken breast ice cream with inulin formula were in the acceptable limit according to Notification of the Ministry of Public Health. In addition the total energy of the chicken breast ice cream with inulin formula was lower than basic formula. The cost of the chicken breast ice cream with inulin formula was higher than basic formula at 16.23%.

Product development of jelly ready meal from stevia. The purpose of study and processing in jelly ready meal from stevia. The resulfs showed that formulation 3 because had springiness and softness appropriante. Quantity used of stevia 4 gram had sensibility in color order and flavor for stevia and add apple green flavor was 0.5 percentage because can reduce the specific odor of stevia. The physical respective (aw) = 0.54 ± 0.01 and attributes were as follows : L* a* b* value 65.81 ± 0.87 -0.38 ± 0.12 14.02 ± 1.04. The chemical analysis of jelly ready meal from stevia compare with basic product attributes were as follows : protein crud fiber and ash have more than basic product but less valuable moisture content and total sugar = 10.45 ± 0.00 percentage reducing sugar = 14.36 ± 0.00 percentage dietary fiber = 22.10 ± 0.00 percentage energy value 3120 ± 0.00 calorie/gram. The microorganism (TPC) yeast and mold according to the standard. The consumer accept products like very much and interested to buy product are at 79.76 percentage

The purpose of this study is to study a proper quantity of golden bean powder in 4 different levels: 25 50 75 and 100 of the amount of almond powder to study the amount of nutrients in a macaron which made of golden bean powder and to study the level of acceptance of using golden bean powder instead of almond powder in a macaron. The researchers investigated the appropriate amount of golden bean powder in the product by studying the ingredients used in the formulations included golden bean powder by French meringue technique. The researchers used a five-point hedonic scale product to observe sensory of product in appearance color smell taste texture and overall with a taste. The panelists were 40 students in the Department Faculty of Home Economics at Rajamangala University of Technology Phra Nakhon. The Randomized Complete Block Design (RCBD) method was used and compared average scores by Duncan New Multiple Rang Test (DMRT) method at 95% confidence interval. There were statistically significant differences in the levels of golden bean powder all sensory attributes (p< 0.05). Specifically the addition of 75% of golden bean powder had the highest level of acceptance for all sensory attributes with average scores: 4.50 4.42 4.27 4.42 4.27 and 4.42 respectively. The nutrition in macaron net weight 100 grams contain 383 kilocalories of Energy Protein 9.96 grams Carbohydrate 76 grams Sugar 62 grams and Fat 4.38 grams. Based on the comparison of the cost of the standard formula and the golden bean powder it found that the standard formula has a cost of 4.36 baht per 1 pair while the cost of gold bean powder is 2.4 baht per 1 pair. It shows that the golden bean powder will give lower energy than almond powder. Moreover golden bean powder can reduce production costs produce as much as 1 fold.

The objectives of this special project were to investigate basic formulas of Chendol and to study the content of Supplementea of Red hawm rice in lodchong Singapore at different four proportins including control 15% 30% and 45% of red jasmine rice. Randomized Complete Block Design (RCBD) was used as the research design. Sensory evaluation was conducted to assess appearance color flavor taste texture and over all preference with 9-Point Hedonic Scale. 80 tasters were instructors and students in food and Nutrition Faculty of Home Economics Technology Rajamangala University of Technology Phra nakhon. Cata collected were analyzed to determine mean ( X ) and Analysis of Variance (ANOVA). The statistical comparison was conducted by using (Duncan’s New Multiple Range Test DART) with a significance level of 0.05. Data were analyzed through statistical software packages. The results of studying basic formulas indicated that tasters preferred the 10% red jasmine rice formula in terms of appearance flavor taste texture and over all preference with mean scores of 8.39 8.42 8.34 829. 8.47 and 8.42 respectively. The preference was at a moderate level. When ANOVA and statistical comparison were considered. There were the differences in appearance color. flavor taste texture and overall preference with a statistical significace level of 0.05. A study of the physical properties and chemical properties of red jasmine rice in the Cendol showed that the color properties of res jasmine rice in Cendal based on the brightness (L * ) the reduction was 30% lower than the control formula When Adding red jasmine tice the color would be concentrated. The value of a * the formula of adding quantity of red jasmine rice in the Cendol with 30% was close to red color over control formula The value of b * when the amount of jasmine rice in the Cendol was increased by 30% the b * value decreased because of the high amount of anthocyanin resulting in lower b * Anthocyanin was a water-soluble pigment and was a naturally coloring substance. When analyzing the chemical composition control formula and the formula of adding quantity of red jasmine rice in the Cendol with 30%t the Cendol contained mare nutrients protein fat ash fiber and carbohydrates. The average was 0.46 0.68 0.12 1.70 and 36.45 respectively. There was a statistically significant difference (P≤0.05).
