Physical characteristics and acceptance of chocolate mousse produced from commercial pasteurized milks contained different fat content
Chemical composition of commercial pasteurized milks contained different fat content (full-fat; FF low-fat; LF and non-fat; NF) was studied. NF contained the lowest fat content (0.12%) with the highest protein content (3.20%). NF exhibited the highest foaming ability and stability. The chemical compositions physical and sensorial properties of chocolate mousse produced from FF LF or NF were also investigated. M-NF had the lowest in fat content resulting in energy reduction when compared with M-FF and M-LF. M-NF also showed the highest firmness and adhesiveness (p<0.05). This was probably due to different chemical composition of pasteurized milk used. For color measurement M-FF showed the highest L* value. However all chocolate mousse samples had no difference likeness score for texture taste and flavor (p>0.05). From the results commercial pasteurized non-fat milk could be not only used for chocolate mousse production without effect on textural and sensorial properties but the energy from fat was also reduced.
Assessing the achievement of cooperative education program faculty of science and technology
The objectives of this research were 1) to study the environment of cooperative education of the Faculty of Science and Technology Rajamangala University of Technology Phra Nakorn and 2) to study the achievement of this cooperative education project towards the development of graduates competency in the first semester of academic year 2012. The research methodology consisted of 2 stages. The first was to study the environment of the cooperative education from both data sources of printed and electronic by comparing their content to the standard of Thai Association for Cooperative Education. The second was to study the achievement of this cooperative education project towards the development of graduates competency by using questionnaires to survey opinions of all stakeholders in this project of the Faculty of Science and Technology Rajamangala University of Technology Phra Nakorn. Three sampling groups were from educational institutes enterprises and students. The number was 211 in total. Analyses applied included social statistics particularly descriptive statistics which were number percentage mean and standard deviation. The most important findings are as follows: 1. With regard to the study the environment of cooperative education of the Faculty of Science and Technology Rajamangala University of Technology Phra Nakorn it was found that it covered all 4 standards of Thai Association for Cooperative Education; that is 1) curriculum of cooperative education 2) supervision of cooperative education 3) students of cooperative education and 4) assessment and evaluation of cooperative education. 2. The study of stakeholders to the achievement of cooperative education of the Faculty of Science and Technology Rajamangala University of Technology Phra Nakorn shows that 1) educational institutes had a very positive attitude 2) enterprises an average attitude and 3) students a very positive attitude. The obstacle affecting the achievement of cooperative education of the Faculty of Science and Technology Rajamangala University of Technology Phra Nakorn was that the university did not have the central to fully manage and support cooperative education for all aspects such as resources learning space supplies human resources and most importantly IT managing system. Also there were problems with correct knowledge towards cooperative education of enterprises and that students did not receive any payment
Research performance reporting of Rajamangala University of Technology Phra nakhon during 2008–2011
The objective of this research was to survey research data of Rajamangala University of Technology Phra Nakho n that was 1) published 2) cited and 3) published with regard to the collaboration of its researchers with those of other universities in both national and international journals during the years 2008-2011. Such related data was collected from journals that appeared in 1) the database of Thailand Journal Citation Index Centre (TCI) 2) Web of Science database (WoS) and 3) RMUTP Research Journal. Analyses applied included social statistics particularly descriptive statistics which were frequency percentage and weighted score from six indicators. From the survey it was found that there were 559 lecturers and researchers in Rajamangala University of Technology Phra Nakhon. 67 out of 559 (12 per cent of the total) had research work published. The most important findings are as follows: 1. During four years (2008-2011) the university had 80 published research articles. 96.25 percent of the total were published nationally and 3.75 percent internationally. The total weight is 52.88 and the weighted score is 9.46. 2. There was only one article that was cited in a national journal in the year 2010 representing 1.25 percent of the total. The total weight is 1.00 and the weighted score is 0.18. 3. There were 18 articles or 22.50 percent of the total that were produced under the collaboration with researchers from other universities. The total weight is 23.00 and the weighted score is 4.11
Improvement of learning efficiency of physics I for engineers course by real-time Simulating graphical animations
The main problems of learning skills of a physics I for engineer’s course due to the lack of standard computer assisted instruction multimedia and its abstract nature therein were improved and repelled by using the invented teaching animation modules. Applying the established e-learning multimedia modules to the registered students from many faculties of the Rajamangala University of Technology Phra Nakorn via the learning management system it found that the improvement recipes have appropriate to increase both the learning skills and their highly attitude to this subject. The improved students by the invented media can effectively apply the contents to the higher levels study of concerning subjects.
Heavy metal adsorption of waste waters from chemical laboratory using firebrick. Case study : Faculty of Science and Technology, Rajamangala University of Technology Phra Nakhon
The purpose of this research is to study the heavy metal removal from wastewater from laboratory by using adsorption process with firebricks. Waste water was collected among three courses of laboratory such as analytical chemistry principle chemistry and chemistry for engineers. The optimized absorption efficiencies of multi-elements with stirring time volume ratio and temperature were 2 hours 10 g/100 mL and room temperature respectively. It was found that absorption efficiencies of lead (Pb) copper (Cu) zinc (Zn) chromium (Cr) were 65.1 54.8 63.4% and ND respectively.
