The study using rice bran oil shortening substitute margarine pastry in Puff Pastry the objectives of this study were to investigate the basic puff pastry to study volume of four types of using rice bran oil shortening substitute margarine pastry in puff pastry at shortening 0% 25% 50% 100% percent of total margarine pastry weight. The experiment was conducted by using randomized complete block design (RCBD) to evaluate product attributes in appearance color flavor taste texture and overall liking with the 9- Point Hedonic Scale. There were 80 tasters who were instructors and students at the Foods and Nutrition Major the Faculty of Home Economics Technology at Rajamangala University of Technology Phra Nakhon. Data were analyzed through mean (xˉ) and Analysis of Variance (ANOVA) and Duncan’s New Multiple Range Test (DMRT). From the study on the amount of four recipes of using rice bran oil shortening substitute margarine pastry in puff pastry. The basic formula 0% 25% 50% and 100%. The tester acceptance of shortening 25% formula most. In terms of color flavor taste texture and overall liking in medium. The basic formula 0% and shortening 25%. The tester acceptance in terms of appearance higher than other recipes liking in very. When the variance was analyzed and statistical difference was compared It was found that the appearance color flavor taste texture and overall liking was different with statistical significance at the 0.05 level.
การศึกษาระยะเวลาอบแห้งที่เหมาะสมและลักษระทางกายภาพของหมูแผ่นอบแห้งด้วยไมโครเวฟตามด้วยอากาศร้อน
The objectives of this research were to determine the suitable times of pork slices drying using microwave followed by hot air and to find specific energy consumption during drying. The physical characteristic (color and hardness) and the sensory test of dried pork slices were also investigated. Pork slices with the sizes of 50x50x1.3 and 50x50x2.2 millimeters were dried using the microwave at the powers of 160 320 480 640 and 800 watts until the samples did not burn during drying. Then the samples were dried using hot air at a temperature of 110oC until the moistures of the samples were lower than 20% dry basis. Based on the experimental results it was found that the suitable times of the samples drying using microwave were 50-600 seconds which depended on the microwave powers and the pork thicknesses. In hot air drying period drying times of the samples with thicknesses of 1.3 and 2.2 millimeters were 30 and 45 minutes respectively. The microwave powers had no significant effect on the redness (a value) and yellowness (b value) of dried pork the hardness of dried pork and the specific energy consumption (P<0.05). The pork thicknesses had the significant effect on the lightness (L value) and yellowness (b value) of dried pork the hardness of dried pork and the specific energy consumption (P<0.05). Moreover sensory scores of the dried pork obtained from this research were close to those obtained from the local market.

The biosorption of phosphate using modified cassava waste were studied. Cassava pulp was modified in methylamine for the adsorption of phosphate ion in aqueous solution. XRD SEM and FTIR result confirmed the surface modification of modified cassava waste. The adsorption experiments were conducted in a batch reactor. The studied parameters included pH contact time and initial concentrations. The amount of phosphate in the solution was measured by Vanadomolybdophosphoric acid method. Optimum conditions of adsorption were 0.10 g of modified cassava waste pH 4 and 5 hour of contact time at 25 mg/L of initial phosphate concentration. Kinetic of adsorption were studied by using the pseudo-first and pseudo-secondorder models at room temperature. The results indicated that the pseudo-second-order model best described adsorption kinetic data. The Langmuir and Freundlich adsorption models were applied to describe the isotherms and isotherm constants. The adsorption of modified cassava fitted well with the Langmuir model and the maximum adsorption capacity of 5.128 mg/g; and the active site of adsorption was amine functional group. Phosphate released in water reach equilibrium within 4 days.
Surface modification of perlite by using silane for the enhancement of heat aging resistance of natural rubber vulcanisates
The enhancement of mechanical properties of natural rubber vulcanisates was expected by surface modification of perlite particles. Thus the objective of the present study was to investigate the cure properties and the heat aging resistance properties in terms of stress at 100% elongation tensile strength and percentage elongation at break after surface modification. Furthermore the rebound resilience and abrasion resistance of perlite treated with silane filled in NR vulcanisates were investigated. In a comparison the properties of clay-filled NR vulcanisates were determined. The results reveal that surface modification by using silane caused a reduction of scorch time and cure time but an increase in torque difference and swelling resistance. Also surface modification gives better perlite-NR interactions before and after aging. The better heat resistance properties of perlite-filled NR vulcanisates than those of clay-filled vulcanisates is detected from relative property data. Nevertheless a lower percentage of rebound resilience and abrasion resistance of perlite-filled vulcanisates before and after surface modification than those of clay-filled vulcanisates are observed. This is owing to the large particle size low specific surface area poor dispersion and agglomeration of perlite in NR vulcanisates.
Drying kinetics model of fermented soybean meal using hot air-drying
The aim of this research was to model the hot air-drying (HAD) of fermented soybean meal (FSBM) containing probiotic Enterococcus faecium . The HAD was performed to reduce the moisture content of the FSBM. The effects of drying temperature on cell viability and moisture content were investigated. Moisture content decreased rapidly with increasing drying temperature. This probiotic strain’s cell viability slightly decreased at drying temperatures lower than 50°C and was greatly decreased at 55°C. Four mathematical models were applied to describe its drying kinetics revealing that the Page model was the best fit for characterizing the drying kinetics during drying of FSBM with a coefficient of determination (R2) of 0.9996. Moreover the Page model provided the lowest root mean square error (RSME) and chi-square (X2) and the highest modeling efficiency
