กรรมวิธีการปรับกรดของผักและสลักด้วยเครื่องปรับสภาพความเป็นกรดภายใต้การควบคุมอุณหภูมิและความดันบรรยากาศ
. This research aimed to study the acidification processes of carving vegetable using acid conditioning machine under emperature and pressure control which was developed in this study. Four acidification procedures were done at normal atmospheric pressure (method 1) under vacuum pressure for 10 (method 2) and 20 min (method 3) and vacuum pressure alternating with normal atmospheric pressure for each of 1 hour. There were two main parts of acid conditioning machine including the temperature controller inside the pickle tank and heat conductor tank and the pressure controller inside the pickle tank. The pickling temperature was stabled at 40oC under the pressure of 0.5 Bar. PLC (Programmable Logic Controller) program was used to write the ladder for controlling all processes and display through SCADA system. The results showed that the acidification method by soaking the carved-rose carrot under vacuum pressure alternating with normal atmospheric pressure showed the shortest time to equilibrium by 7 hours. Then the carved-rose carrot was packed in the glass jar followed by sterilized in boiling water for 15 minutes and stored at room temperature for 7 days. Total bacteria count Escherichia coli and Yeast-mold were not exceeded than the standard limit. Staphylococcus aureus was not detected throughout the storage periods

The objective of this research was to find the suitable processes of carved-vegetables which packed in hermetically sealed container. Two vegetables were composed of carrot and pumpkin. There were carved into rose or leaf shape. An optimum ratio of 2 recipes of pickle solution were studied. The first one was a recipe which acidified with lactic acid (acidified-recipe) to pH <4.6. Another one was a recipe supplemented with preservative (preservative-added recipe). The results showed that an optimum ratio for acidified-recipe was composed of 7.23% vinegar 64.81% water 0.81% salt 27.00% sugar and 0.15% lactic acid which showed the final pH was 3.27. For preservative-added recipe an optimum ratio was composed of 27.03% vinegar 27.03% water 0.9% salt 45.05% sugar and 200 ppm sodium metabisulfite which showed the final pH was 3.39. Carrot pumpkin green papaya and cucumber were sanitized in peroxyacetic acid (80 mg/L 3 min). Radish was dipped in tap water for 3 min. Then all carved-vegetables were immersed in calcium chloride solution (0.5% 2 min) before preserved in acidified-recipe solution in plastic box with a lid and then stored at room temperature for 4 days. Equilibrium time pH and °Brix were studied. The results showed that pH and °Brix were decrease during 4 days storage and showed obviously tended to equilibrium. However carved-radish and cucumber were spoiled by microorganisms as a film on the surface of pickle solution and gas bubble was occurred inside a container on 4 days of the storage. Hence three carved-vegetables including carrot pumpkin and radish were used in the next experiment which preserved in preservative-added recipe. Treatment was compared with the same recipe without preservative as the control. All types of carved-vegetables had an equilibrium time for 7 days. Three parts of samples e.g. pickle solution carved-vegetables and mixed-sample showed pH lower than 4.6 and °Brix were gradually decreased during the storage. Shelf-life of all carved-vegetables stored in hermetically sealed container was up to 7 days. Total bacteria count E. coli yeast-mold were not exceeded than the standard limited by Ministry of Public Health and Staphylococcus aureus was not detected throughout 7 days of the storage.

Chanee Monthong and Kan Yao Durian rind be used in this research. Chanee Durian rind powder is similar as wheat flour in color and high yield. Butter cake sponge cake and chiffon cake be used in this research. Increasing of durian rind powder substitute for wheat flour to effect increasing of crude fiber in all cake sample meanwhile decreasing in color and volume of all cake sample which acceptance affects. Consumer acceptance test in Potential Development of cake products with Flour from durian peel project for 100 tester found that most testers are more than 80 percent acceptance in the product of Potential Development of cake products with Flour from durian peel project. For the Technology propagation of the Potential Development of cake products with Flour from durian peel project at the Faculty of Home Economics Technology. All participant are most satisfied in all aspects of Technology propagation. Based on the research results the maximum replacement potential is 10%. Increasing this amount of substitution will have an effect on the appearance. And color features. Especially the texture feature. Therefore the study should be further studied on the methods of production. The durian peel is more detailed. This may result in the development of high-fiber pastry products. To help improve the sensory properties. These features affect product adoption

Suitable durian rind flour production (durian rind flour-DRF) was three strain different durian rind were used include Chanee (CN) Monthong (MT) and Kan Yao (KY). Three methods of durian rind were used. 1 (TD-Tray Dry) 2 (SD-Stream Dry) and 3 (BD-Boil Dry). Chanee Monthong and Kan Yao Durian rind after drying and powdered process was found drying method 2 (SD-Stream Dry) to the highest yield of durian rind Kan Yao the second and the lowest durian rind is Monthong. The total weigh strain and shelf life of durian was affect to durian rind powder volume. Kan Yao is high volume of the white rind the second is Chanee and Monthong is lowest in white rind. The most total weigh of durian was affect to white durian rind in the other hand durian low total weigh was affect to white durian rind to the durian rind powder. Crude fiber is the mainly of chemical compositions of the three strain different durian rind. Cellulose and lignin as non-soluble dietary fiber. The soluble fiber found in durian rind is pectin. The quality of durian rind powder in Method 2 gave the lightest color followed by Method 3 for Method 1 to give the darkness color. Acidity of durian peel and durian rind powder acidic. The viscosity of durian rind is derived from pectin-a polysaccharide compound. For the communication of technology the potential development of durian rind flour powder at the Faculty of Home Economics Technology the participants were most satisfied in all aspects. Preparation of durian peel powder in all 3 ways there are parts that can not be powdered. In the next study. It is recommended to study the method to obtain powdered durian that cannot be powdered.

The aim of this research was to develop recipe for butter cake from lowcalories sweeteners instead of sucrose sugar chemical properties of butter cake from low- calories sweeteners instead of sucrose sugar and to study the physical properties of butter cake from low-calories sweeteners instead of sucrose sugar. The use of maltitol syrup to replacement sucrose butter cake low-calories show that 36.28% to 42.47% of carbohydrate content. Decrease in carbohydrate content results in reduced calories. Cake crumb show that the b* value decreases significantly and the a* value is not significantly different. The texture of the butter cake has a higher in hardness and lower in cohesiveness. The Adhesiveness and Springiness are not different. The sensory evaluation scores of butter cakes ranged from 6.95 to 8.61. Appearance color aroma flavor texture and overall liking. The results showed that 40% and 60% of sucrose substitutes were sucrose substitutes. The 80 on all the attributes especially on the flavor. However the use of maltitol syrup substitutes for sucrose. As a result the amount of energy of the butter cake decreased which is beneficial to the health of consumers.
