Durian has been very popular not only local people but also tourists. As a result there are many durian peels wasted so this research is explored the utilization of durian peels. Durian rind is a biological waste but contains high amount of crude fiber. This research aims to study using durian rind powder to replace wheat flour in butter cakes at 5 10 and 15 % (w/w) (DRB-5 DRB-10 and DRB-15). Physical properties chemical composition and sensory evaluation of the butter cakes were analyzed. The results showed that durian rind powder contained 51.43 % of crude fiber. Increasing of durian rind powder in butter cakes showed significant decreasing of lightness (L*) blue–yellow component (b*) springiness and cohesiveness values while green–red component (a*) hardness and gumminess values were significantly higher than the control sample (BC) (p≤0.05). Dietary fiber content of the products shown significantly increased by 13.98% for DRB-5 48.92 % for DRB-10 and 54.84% for DRB-15 as compared with BC (p≤0.05). The acceptance scores of DRB-5 including appearance odor taste texture and overall liking scores were highest. There are 300.28 kcal for 1 serving of butter cake which contain 1.70 gram of dietary fiber. However durian rind powder can be used as a food ingredient and source of dietary fiber in other food recipes for further studies.

This research aimed to develop compound of prototypes polymer bio-composites from cassava starch (CS) reinforced with agriculture residue the rind of durian fruit. Cellulose extracted from durian rind using hot sodium hydroxide and bleaching treatment with hydrogen peroxide. The removal of lignin and hemicellulose components from durian rind were investigated by fourier transform infrared spectroscopy (FT-IR). Cassava starch bio-composite films were prepared by solution-casting technique which includes 0-50 wt% of durian rind (DR) or durian rind cellulose (DRC) as reinforcement agent and urea/glycerol (GU ratio = 50:50) as plasticizer. The physical and chemical properties of thermoplastic starch (TPS)/DR and TPS/DRC bio-composite films were investigated. The percent elongation at break of bio-composite films were increased when compared to control CS film. From 15TPS/DR (80/20) films showed increase the elongation at break from 7.28 to 14.00% when compared to CS control films. While 15TPS/DRC (80/20) bio-composite films exhibited that the highest elongation at break to 77%. Durian fiber (DR or DRC) loading decreased the water absorption of plasticized bio-composite films. Furthermore incorporation of DRC in composite can be enhanced film stability in water better than DR. Therefore the effect of DRC reinforcement agent on TPS bio-composite films can improve water resistance and mechanical properties especially in terms of flexibility. Finally the waste of bio-composite films was degraded completely in soil burial test.
ผลของการใช้เปลือกทุเรียนผงทดแทนแป้งข้าวสาลีต่อคุณภาพของแป้งทาร์ต
The objective of this research was to determine effect of substitution wheat flour with durian rind powder at 0 5 10 and 15% on tarts quality. Assessment by physical and chemical properties sensory evaluation. Results showed that increasing of durian rind the texture of the tart dough before baking hardness toughness and cohesiveness increased. After tart dough baked hardness and toughness increased. Both the tart dough before and after baking decreased lightness (L*) and yellowness (b*) increased of redness (a*) and water activity (aw) of baked tart dough has decreased. The durian rind tart contained increased of moisture protein ash and crude fiber. As of fat and carbohydrate are decreased. For sensory evaluation in acceptance color odor taste flavor texture and overall the tester accepted like very much at 15% of substitution durian rind powder with wheat flour.

This research focuses on the production of charcoal briquettes from agricultural residues by using durian and nypa palm peel mixtures. The objectives of this study are to study the combustion efficiency of charcoal briquettes; study the suitable ratio for the production of briquettes with the ratios of durian : nypa palm peel mixtures as 100:0 50:50 25:75 and 0:100; recycle the agricultural residues as the renewable energy sources and analyze the fuel characteristics; moisture content ash content volatile matters fixed carbon and heating value. The results showed that the best ratio for the combustion efficiency of charcoal briquettes is 50:50 with the minimum moisture content of 4.68% the minimum ash content of 2.70% the volatile matters of 10.33% ; the maximum fixed carbon of 25.56% and all characteristics are met with the standard of charcoal briquettes from the local community products. In the ratio of 100:0 it showed the maximum heating value as 5399 calories per gram. Therefore the 50:50 charcoal briquettes are suitable as the renewable energy source. Besides the capacity of odor adsorption was analyzed by adding the odor substances (mothball) in two bottles with three mothballs for each bottle for two consecutive days before removal. Then sic of 50:50 charcoal briquettes were added into one bottle. Ten testers smelled the bottle every two days for six days. The result showed that the bottle with the charcoal briquettes had odor less than the bottle without briquettes. Hence the charcoal briquettes from durian and nyla palm peel mixtures have the best odor adsorption capacity and are suitable for household uses.

The objective of this research to study the process of durian rind including of tart Danish pastry cookies Brownie and breadstick. To determine the quality of processed food products from Durian rind. To study consumer acceptance (Consumer test) on food products from durian rind. Bakery products used in the trial including tart Danish pastry cookies Brownie and breadstick. The substitution of wheat flour with durian peel powder products bakery substitute at 0 percent to 30 percent panelists recognized that the 0 percent to 10 percent except sample brownies that taste to recognize. However the replacement of 30 per cent on the amount of compensation increases. Make an example of a more solid texture. The panelists acknowledged the least clear. And not according to the way that it should be. However durian peel powder supplementation resulted in increased amount of fiber which is beneficial to the health of consumers. Acceptance testing of consumer substitution of wheat flour with durian peel powder products in bakeries 100 by means of random chance that the test of more than 80 percent of the product acceptance bakeries are replacement of wheat flour with durian rind powder. For bakery products technology transfer from Japan selected durian powder at the Faculty of Economics of Technology. Trainee There is satisfaction in all aspects of technology transfer.
