Physical properties and consumer acceptance on cotton ball cakes added color powder from carissa carandas l. mixed with maltodextrin
Physical properties and consumer acceptance on cotton ball cakes added color powder from carissa carandas l. mixed with maltodextrin

The objective of this research was to study the effects of the processing method on colorant powder from Carissa carandas L. mixed with maltodextrin 3 levels (10 13 and 16 %). The physical properties and consumer acceptance on cotton ball cakes added colorant powder from Carissa carandas L. mixed with all maltodextrin were added at 15% on flour weight. Results from physical properties of cotton ball cakes added colorant powder from Carissa carandas L. mixed with maltodextrin at 10 % was found that the lowest lightness. But also the cotton ball cakes added colorant powder from Carissa carandas L. mixed with maltodextrin at 16 % was exhibited the highest redness and yellowness (p< 0.05) and water activity range from 0.92 to 0.93 (p> 0.05). However the cotton ball cakes added colorant powder from Carissa carandas L. mixed with maltodextrin at 13 % was showed that the highest hardness and chewiness (p< 0.05). Furthermore the colorant powder from Carissa carandas L. mixed with maltodextrin at 10 % was found the lowest adhesiveness (p< 0.05). In addition sensorial evaluation was accepted overall liking score in range 7.63-7.80 (like moderately to like very much. The produce colorant powder from Carissa carandas L. was added maltodextrin from 10 to 16 % (w/w) on (p>0.05).

Teaching-learning models on acceptance and learning development in food processing of agro-industry student, RMUTSV
Teaching-learning models on acceptance and learning development in food processing of agro-industry student, RMUTSV

Student satisfactory survey in Food Processing courses held at Rajamangala university of Technology Srivijaya was carried out. Twenty four undergraduate students in the program of Food Science and Technology were selected and evaluated the questions based on course content course material teaching techniques; lectures and practical part report and presentation and field trip. The satisfactory on the course content was found to be very high level. Teaching techniques were found to be no statistically significant (p<0.05). However students had the most preference toward the lectures giving by using Power Point Presentation as a teaching technique. On the other hand practical part of the course was found to be very useful appropriate in daily life and important skill for a professional food scientist. Notablyreport and presentation was very useful to improve English reading Thai editing and presentation skill. Field trip study was suggested to be significantly additional learning experience as well as course assignment presentation. In addition good relation between lectures and students had highly significant important for enhancing learning process.

Effect of process on qualities and consumer acceptance of crispy pineapple
Effect of process on qualities and consumer acceptance of crispy pineapple

The aim of this research was to develop the crispy pineapple formula (pineapple salt all purpose flour and glycerin) by using mixture design. Ingredients factor were all purpose flour (10-15% of pineapple) and glycerin (0-5% of pineapple) to form a pineapple patty before drying at 180 oC for 2 min. The sensory result found that the optimum formula contains of pineapple salt and 15 % all purpose flour was the most like score. Then developed with the factors of the temperature and time used CCD bring analyst the color and the sensory test using a sample of 30. The result found that showed the optimum at 174 oC for 103 sec. Consumer tests were done with 200 pineapple preferred consumer show that the average like is 3.72 point (5 point) with a height acceptable scored (88.0%).

Physical characteristics and acceptance of chocolate mousse produced from commercial pasteurized milks contained different fat content
Physical characteristics and acceptance of chocolate mousse produced from commercial pasteurized milks contained different fat content

Chemical composition of commercial pasteurized milks contained different fat content (full-fat; FF low-fat; LF and non-fat; NF) was studied. NF contained the lowest fat content (0.12%) with the highest protein content (3.20%). NF exhibited the highest foaming ability and stability. The chemical compositions physical and sensorial properties of chocolate mousse produced from FF LF or NF were also investigated. M-NF had the lowest in fat content resulting in energy reduction when compared with M-FF and M-LF. M-NF also showed the highest firmness and adhesiveness (p<0.05). This was probably due to different chemical composition of pasteurized milk used. For color measurement M-FF showed the highest L* value. However all chocolate mousse samples had no difference likeness score for texture taste and flavor (p>0.05). From the results commercial pasteurized non-fat milk could be not only used for chocolate mousse production without effect on textural and sensorial properties but the energy from fat was also reduced.
