This study investigated the effects of partial replacement of wheat flours with Hom Nil rice flour on the physicochemical characteristics antioxidant activities and sensory acceptance of chinese steam bread (Mantou). Mantou was made with wheat flours partially substituted with Hom Nil rice flour at the level of 0% 10% 20% and 30%. Colour parameters (lightness (L*) redness (a*) and yellowness (b*)) of Mantou were measured using a Hunter colorimeter and found that L* andb* values of Mantou decreased while a* value increased with increase in level of Hom Nil rice flour from 0 to 30%. Physical characteristics including hardness springiness and cohesiveness of Mantou were significantly affected with substitution due to the disruption of dough structure. The hardness of Mantou increased with the increasing of the Hom Nil rice flour substitution (0%-30%) in contrast with springiness and cohesiveness. The total phenolic/anthocyanin contents and antioxidant activities (DPPH FRAP and ABTS) of Mantou increased with increasing Hom Nil rice flour level up to 30%. These results suggested that the substitution of 20 % Hom Nil rice flour would produce healthy and acceptable Mantou with higher total phenolic/anthocyanin contents and antioxidant activities.

This research aims to study phytochemicals and potential of Mapok (Parinari anamense Hance) extracts to inhibit germination and growth of Barnyard grass (Echinochloa crus-galli) a common weed in the rice fields. Organic solvents extracted the part of fruits barks and leaves of Mapok included hexane ethyl acetate and methanol. Crude extracts compose of fruit hexane extract fruit ethyl acetate extract fruit methanol extract bark hexane extract bark ethyl acetate extract bark methanol extract leaves hexane extract leaves ethyl acetate extract and leave methanol extract. Crude extracts were tested of phytochemical tested of germinating inhibition root length inhibition stem length inhibition and dry weight inhibition of Barnyard grass. Leaves ethyl acetate extract showed highest inhibit germination and growth of Barnyard grass The leave ethyl acetate extract was separated by column chromatography to yield nine fractions (F1 – F9 fraction) and tested inhibit germination and growth repeating. The results showed that 1. The crude ethyl acetate extracts from the bark of Mapok at a concentration of 3000 ppm showed the highest inhibited percentage of germinating inhibition root length inhibition stem length inhibition and dry weight inhibition. 2. Fraction F8 of leaves ethyl acetate extract showed the highest inhibited percentage of germinating inhibition root length inhibition stem length inhibition and dry weight inhibition.

The Thai wisdom knows the benefits of Carissa carandas L. to be used as a traditional herbal medicine. However there was no scientific evidence to show that Carissa carandas L. of Thailand can treat gout or not. In this research the Carissa carandas L. fruit extract in semi-ripening and ripe stage were studied for the phytochemical and inhibitory activity of xanthine oxidase one of the causes of gout. The result of hytochemical indicated that the crude extract from semi-ripening stage fruit contained many substances; phenolic compounds alkaloids flavonoids terpenoids saponins and deoxy sugars. While the ripe stage fruit contained the similar substances excepted saponins. The extract solution of Carissa carandas L. showed the xanthine oxidase inhibitory activity as the ethanolic extract solution gave the higher activity than water extract solution. The crude extracts of semi-ripening stage fruit presented the higher activity than the ripe stage one with the IC 50 values of 2.40 ± 0.05 and 2.87 ± 0.37 mg/mL respectively. The result of ripening stage with different phytochemical may be related to inhibition of xanthine oxidase activity. Therefore the selecting of sampling period and purification of extract may be a choice for using as medicine for gout

The purpose of this research was to develop a short vocational training course on household chemical products and to develop a training course for shortterm vocational training in the production of household chemicals. Population groups Is a general public in Bangkok and metropolitan area by using the voluntary selection as follows. Trial of a short course on the production of household chemicals 10 participants. Evaluation of short courses in household chemical production 10 participants. Technology transfer the short-term training course on household chemical production 20 participants and five speakers. The tools used in the research are as follows: 1. Demand questionnaire 2. Short-term vocational training course 3. Satisfaction assessment. Data analysis using statistical software packages. The statistics used were mean ( X ) standard deviation (SD) and t-test. The research found that 1. Study and development of short courses in the production of household chemicals 1.1 selection of household chemicals that will lead to the creation of training courses based on components Where to buy Price per set Properties of components Safety and hazard Materials and equipment used for production storage use and distribution opportunities 1.2 Creating training courses training course components and training documents to have a sequence of steps that are easy and convenient for the learning of the general public 2. Trial of a short course on the production of household chemicals 2.1 Most trainees are satisfied with the short-term training program model as follows: Training procedures Training hours 1.30 hours per 1 course Short-term courses can be implemented and the curriculum can be used as a guideline for occupation at the highest level. As for the number of trainees four people per group per 1 course is at a high level. 2.2 Most of the trainees were satisfied with the speakers and short-term training. At present most human-related products contain a mixture of chemicals for inhibiting microorganisms polluting the environments and harming the users. The purpose of this research was to develop a product using banana and papaya peel extracts as replacers for the chemicals inhibiting microorganisms in heel cream. By extracting raw bananas and papaya peels with coconut oil the studying the efficacy of inhibition on E. coli S. aureus Aspergillus sp. and S. cerevisiae with Disk Diffusion method at the protein concentration were performed as follows: 25 50 100 and 150 micrograms per milliliter. The observation of clear zone to observer clear zone of inhibition. and the Turbidity method using light absorption at a length of 600 nm was also were shown the corresponding results of microbial inhibition. observed and showed the consistent results. Especially the papaya extract having the protein concentration at least of 150 micrograms per milliliter could inhibit all 4 microbe species but could not inhibit S. cerevisiae that indicated a good trend of no harm on human. When mixing the extract in the heel cream it was found that Heel cream containing banana extract papaya and both mixtures displayed the density of 0.9674 0.9103 and 0.8057 gram per cubic meter respectively. They could be stored at room temperature for more than 45 days and still maintained the properties of microbial inhibition by up to 80 percentages. When studying the satisfaction of consumers collected randomly from teenagers to elders at both sexes of 40 people more than 80 percentages of the customers were satisfied with the heel cream from all extracts. These all creams could make the feet soft and moisturized within 1 week. More suggestions were to improve the smell of heel cream products to be suitable for all age of consumers. Therefore this research could be concluded that banana and papaya peel extracts inhibiting microorganisms could be used as a heel cream for further continuously developing at the industrial level.
