Study on white bean flour in place of wheat flour in Taiwan pineapple tart The objective is to study the basic recipe of Taiwanese pineapple tart. And study the amount of white bean flour in place of wheat flour in Taiwan pineapple tart. By studying the 3 basic recipes of Taiwanese pineapple tart flour. To get the recipe that the tastemakers accept the most And to study the amount of white bean flour instead of wheat flour in 5 levels of Taiwanese pineapple which are 0 percent (control formula) white bean flour instead of wheat flour in 25 percent Taiwanese pineapple tart 50 percent 75 percent and 100 percent. of all wheat flour. The randomized complete block design (RCBD) was used to plan the sensory qualities of appearance color smell taste texture and overall liking. With a 9-point Hedonic Scale tasting method using 40 tasting participants 2 repeated. Who is a teacher and students in the food and nutrition program Faculty of Home Economics Technology Rajamangala University of Technology Phra Nakhon Take the result to find the mean 𝑥̅ Analysis of Variance (ANOVA) and compare the difference of the mean by the method (Least Significant Difference (LSD). The results of white bean flour instead of wheat flour in Taiwan pineapple tart. The tasters accept 25 percent of the taste texture and overall liking. With an average 7.50 7.40 and 7.43 respectively At a moderate level. Regarding appearance and color tasters accepted 0 percent with an average of 7.30 and 7.35 respectively. At a moderate level. As for the smell The tasters accepted 50% with an average of 7.45. Ata moderate level. When used to analyze the variance compare the differences. Found that the appearance color smell taste texture and overall liking. There is a statistically significant difference at the level of 0.05.

The objective of this research was to study the effect of substitution of wheat flour with Cavendish banana flour on specific volume density antioxidant activity and the sensory acceptance of bread using Cavendish banana flour instead of wheat flour as 0% (control) 10% 20% and 30% of the total flour weight. It was found that an increasing amount of Cavendish banana flour caused the darker of the bread appearance and the specific volume of the bread decreased from 4.22 to 2.69 cm3/g while the bread density increased from 0.24 to 0.37 g/cm3. The total phenolic content and antioxidant activity of the bread made of Cavendish banana flour instead of wheat flour were significantly greater than the control bread (p<0.05). Also the sensory acceptance scores by panelists in terms of appearance color aroma taste texture and overall acceptance of bread using 10-30% of Cavendish banana flour content were not significantly different compared to the control bread (p>0.05) . Therefore the bread using 30% Cavendish banana flour gave the highest amount of total phenolic compounds and antioxidant activity with well accepted by consumers.

This research was concentrated on characterized mechanical properties and adjusted compatibility of poly (lactic acid) (PLA) with thermoplastic starch (TPS) as biodegradable polymers composites. PLA was blended with TPS at the proportion of 10 20 30 50 and 70 wt% as well as 2 phr chain extender by an internal mixer at 200°C. The blended materials were then injection molded at 230°C. Tensile testing showed that as the amount of TPS increase the elongation at break tended to increase but the tensile strength and modulus tended to decrease. The morphology was investigated by scanning electron microscope. It was found that distinct phase between PLA and TPS was observed. Yet adding the chain extender clearly improved the compatibility between PLA and TPS. The blended materials were also analyzed by differential scanning calorimetry method to study thermal properties. It was found that as the amount of TPS increased the glass transition temperature (Tg) melting temperature (Tm) and cold crystallization temperature (Tcc) deceased. Additionally chain extenders did not affect thermal properties. The thermal stability of the composites decreased when increasing the amount of TPS because of the degradation of TPS in PLA. However when heated at 100ºC for 1 hr the PLA sample bent while TPS did not bend. When PLA was mixed with TPS the composite was bent according to adding TPS.

Dyes contaminated in wastewater that negatively affecting the environment and human health. The objectives of this study to prepare activated carbon from Salacca zalacca (Sumalee) seeds activated by 36 mmol/g KOH dye solution and activated carbon ratio 20:32 ml/g for dye removal. The influents of dye removal from wastewater by Salacca zalacca (Sumalee) seeds activated carbon were investigated as initial dye concentration activated carbon and dye solution ratio and contraction time. The moisture content the iodine number the methylene blue index and the functional groups by FTIR technique of the Salacca zalacca (Sumalee) activated carbon were characterized and the kinetics adsorption were also analyzed. The results showed that the activated carbon was the microporous material the highest dye removal from wastewater was 7.50 ± 0.25 mg/g the equilibrium time was 150 min with the activated carbon to dye solution ratio of 1:500 g/ml for 200 mg/l initial concentration. The kinetics of the adsorption process can be described by a pseudo-second order model (R2 = 0.9999). When increasing the initial concentration of dyes the adsorption efficiency was increased. The amount of activated carbon increased resulting in lower adsorption efficiency and the equilibrium time was longer
