การพัฒนาผลิตภัณฑ์และบรรจุภัณฑ์อาหารจากสับปะรด สำหรับกลุ่มสหกรณ์การเกษตรหุบกะพง จำกัด
This research aims to develop food product from pineapple along with its packaging and to transfer pineapple processing technology to the Hubkapong Agricultural Cooperation Group Limited Khaoyai subdistrict Cha-am district Phetchaburi province. Results of the study showed that dehydrated pineapple and pineapple syrup could be processed to add more value and to extend shelf life. In dehydrated pineapple processing a study of different levels of sugar concentration (20 30 and 40%) indicated that concentration level of the beginning sugar concentration caused the increase of water loss and sugar level in the product. Concerning ratio of pineapple juice and water (1:1 1:1.25 and 1:1.5) and amount of pectin (0.25 0.50 and 0.75 %) in pineapple syrup processing it was found that the increased level of sugar caused the increase of total soluble solid in pineapple syrup. The increased level of pectin also affected the increase of viscosity of pineapple syrup. The processing technology was transferred through a training course for 40 members of Hubkapong Agricultural Cooperation Group Limited Khaoyai subdistrict Cha-am district Phetchaburi province. Results indicated that the finishing food products from pineapple of every groups were in good level with average score range of 4.00-4.36. The trainees regarded the training process as highly suitable (average score of 4.31) and the trainers as most suitable (average score of 4.66). The training materials apparatus document and venue and the training management aspects were regarded as highly suitable with average score of 4.16 and 4.10 respectively.
การพัฒนาบรรจุภัณฑ์เพื่อสิ่งแวดล้อมจากเส้นใยกล้วย สำหรับบรรจุผลิตภัณฑ์อาหารสำเร็จรูป
This research examined the green packaging development from banana fiber for instant food products. The purposes of this study were (1) to construct approve and develop the sketch design (2) to develop banana fiber package prototypes that protect food products inside (3) to eliminate packaging environment problems prevent natural resource and save energy in package processing and (4) to design packaging for instant banana food products. Method and procedure of this study were divided into 2 categories: Part I Studying banana fiber properties data suitable for making packaging and Part II Studying consensus data to develop green packaging from banana fiber for instant food products using a questionnaire after testing packages such as stand-up pouch paper box paper cup and zip lock bag to survey the appropriateness and the suitability for practical green packaging for instant banana food products. The findings were as follows: (1) Satisfaction of every factors were good level and every packaging patterns conformed to the identity design in structural and graphical packaging. (2) As a result of studying structural packaging factors it indicated factors that had excellent satisfaction level in every packaging patterns were packaging with aesthetic and elegant ones identity packaging and souvenir packaging. The least satisfaction in every patterns were average in storage packaging because of its easier to biodegradation. (3) For studying graphical packaging factors it found that all of factors in every patterns had excellent satisfaction level such as identity brand alphabet and easier to recognize as follow.
Technology Transfer on Banana Flour and Food Products
The project aimed to construct and disseminate knowledge on banana flour and food products through media; to transfer technology by conducting the workshop training on banana flour and food products and to follow up knowledge implementation for community market testing. Project was done by preparing contents materials equipments sites taking photos gathering data producing original media producing VCD training need analysis preparing training program evaluating and following up the training achievement. The result of the project was found that 500 VCD cases were constructed for 85 trainees. Percentages of the project achievement was 99.16%. There was a significant difference between pre-test and post-test of the knowledge at .05 level. Mean of the achievement in creating quality work was at 4.30. The achievement percentages of implementing how to make banana flour baked dessert and Thai dessert for community market testing was 12.5%.
การพัฒนาผลิตภัณฑ์อาหารจากกล้วยเพื่อธุรกิจอาหารเจ
This research aims to 1) develop pork roll product from cultivated banana flesh and banana flour for vegetarian food business; 2) develop suitable and unique packaging for food product using cultivated banana flesh and banana flour instead of meat; and 3) transfer technology in developing food product using cultivated banana flesh and banana flour instead of meat for vegetarian food business. Regarding suitable amount of banana flour used in place of isolated soy protein in pre-emulsion preparation from 4 levels of banana flour used at 0 10 15 and 20 percent it was found that increasing amount of banana flour used in place of isolated soy protein caused significant increase of L* value in the product (p<0.05). Moreover hardness and flexibility in texture profile of the product were not significantly different from the control product (p>0.05). In terms of sensory evaluation tasters gave the highest score for meat-emulated reducedemulsion product that used banana flour in place of isolated soy protein at 15 percent. For packaging of pork roll product it was found that Model-A package was the most suitable with recommendations to add tight-closed material to prevent contamination from outside and to print expiry date as well as food safety certified sign. Furthermore consumers’ overall satisfactory in packaging model was found to be highest at the mean of 4.31. Finally transferring of technology in a form of training workshop in developing food product from banana flour for vegetarian food business for Ban Lak Khon Bakery Housewife Community Enterprise and entrepreneurs in Nonthaburi province showed that post-training test scores were significantly higher than pre-training scores at .05 level. This indicated that technological transfer in a form of real-practice workshop provided increasing knowledge in developing food product from banana flour for vegetarian food business. Moreover it was also found that trainees were highly satisfied in both overall service (mean of 4.85) and by-aspect: servicing staff (4.93) procedure/steps (4.87) trainers (4.83) and usefulness of service (4.75) respectively.
การพัฒนาผลิตภัณฑ์เนื้อสัตว์เทียมจากถั่วเสริมรากบัว
The objectives of this study were 1) to study the basic formula of Bean-Based Meat Analogue Products Supplemented. 2) To study the appropriate amount of lotus root utilization as supplementation in bean-based meat analogue products and to study the nutritional value of bean-based meat analogue products supplemented with lotus root. 3) To study the acceptance of bean-based meat analogue products supplemented with lotus root. 4) To study the consumer acceptance of bean-based meat analogue products recipes supplemented with lotus root. The results showed that the basic formulation of bean-based meat analogue in the recipe 2 which contains 50 grams of soybeans 60 grams of green peas 40 grams of white beans 10 grams of shiitake mushrooms and 5 grams of beetroot was the most accepted by 5 experts. The results of sensory evaluation showed that lotus root supplementation in a 10% bean-based meat analogue formulation was statistically significantly higher than that of 5% 15% and 20% lotus root supplementation (p≤.05). The results of the calculation by software package showed that the amount of dietary fiber in the basic formula was 15.56 gram which was lower than the formula that supplemented with lotus root. The amount of protein in the basic formula was 41.40 grams which was lower than the lotus root fortified formula. The results of a consumer acceptance test of 30 people using the 9-Point Hedonic Scale rating method showed that the majority of consumers liked the shape and color. As for the taste smell texture and overall liking it was at a moderate level of acceptance and 93.33% accepted the bean-based
