The purpose of this paper is to study a standard recipe for caramel custard substituting Murrah milk for cow’s milk in the standard recipe. Moreover the sweetness of Murrah milk caramel custard was adjusted and examined. Furthermore the nutrition of Murrah milk caramel custard was analyzed and customers’ satisfaction was evaluated using the sensory quality assessment of the 9 - Point Hedonic Scale. The results indicated that the standard caramel custard recipe by Boonyarit (2559) received the most approval. Then cow’s milk was substituted with Murrah milk in the ratio of 100%:0% 50%:50% and 0%:100%. According to the sensory quality assessment the ratio of cow’s milk to Murrah milk (0%:100%) had the most approval. Then the sweetness of Murah milk caramel custard was adjusted by reducing sugar 10% 15% and 20% respectively. The customers’ satisfaction indicated that 20% sugar reduction had the most approval. In addition the nutrition of the original caramel custard (cow’s milk) and the developed caramel custard (Murrah milk) in one serving size (100 grams) demonstrated that the developed caramel custard has higher energy protein calcium and fat than the original carmel custard. The developed caramel custard was tested with 150 participants. The results showed that 45.33% of participants have not known about or tasted the origianal caramel custard before and 56.00% of participants have not known about and tasted Murrah milk caramel custard before. According to the results 81.33% of participants approved of the Murrah milk caramel custard. Also 52.67% of participants agreed that 100 grams per cup of Murrah milk caramel custard is the appropriate amount. Additionally 45.33% of participants accepted the price as 35 baht/100 grams/1 cup. Thus 62.00% of participants will buy Murrah milk caramel custard if it becomes available for sale.

This study was experimental study that had the propose to investigate the possibility of using sludge from wastewater treatment of milk production in case study of Friesland Campina Fresh (Thailand) Co Ltd. This study to investigate suitable ratio in making briquette between sludge and banana peel in ratio 95 : 5 75 : 25 50 : 50 25 : 75 and 5 : 95 by weights and analysis of compressed char were Moisture content Ash content Volatile matters Fixed carbon and Calorific value. The result of this study we found that sludge mixed with banana peel at the ratio of 25 : 75 had Moisture content 9.7 percent Ash content 15.8 percent Volatile matters 61.8 percent Fixed carbon 9.7 percent and Colorific mean 4195 kcal per kg. It can also be used briquette fuel substitutes of firewood in order to conserve the forest resources.

The purpose of this research is to study three standard recipes of milk ice cream and determine the optimum level of seed membrane gac fruit at 10% 20% and 30% which were added in milk ice cream with planning of experiment in type of Randomized Complete Block Design (RCBD). Sensory evaluation was tasted by panels with 9-point hedonic scale. Comparison SD value with Duncan’s New Multiple Range Test (DMRT) in SPSS program. The result showed that the 30% of seed membrane gac fruit is the optimum level because had the highest score in sensory properties. Afterwards physical properties were analyzed that found 6.62 pH value color as 55.21 35.96 and 33.47 according to L* a* and b* 19.83% of overrun value together with 27 g/min melting rate. Nutrition value of this sample 100 gram giving total energy 126.65 kilocalories energy from fat 48.33 kilocalories moisture content 74.38 gram fat 5.37 gram protein 2.06 gram carbohydrate 17.52 gram ash 0.67 gram and beta-carotene 1323 microgram. Average score of appearance color flavor taste texture and overall liking are 4.50 4.32 4.16 4.47 4.48 and 4.51 respectively and 98% of consumer have accepted Milk Ice Cream add Seed Membrane Gac Fruit.

The fresh moonflower (FM) was dried in hot air oven at 50 C 48 hours as the dried moonflower (DM) 7.37 %. Then DM was extracted by ethanol concentration 95% and using the evaporator to evaporate ethanol solution. This study aimed to study the process which extract phenolic compounds (PC) from FM and formulate PC in pasteurized milk. From the results PC was 68.11±1.44 μg/ml. The final formula of pasteurized milk was added PC 1g /200 ml and was pasteurized at 72 °C 15 s. The (L*) 85.91±0.07 (b *) -1.92±0.06 (a *) 17.13±0.24 pH 6.58±0.00 total soluble solid 12 ˚Brix. It could be stored at 4 C for 7 days.
