Suitable durian rind flour production (durian rind flour-DRF) was three strain different durian rind were used include Chanee (CN) Monthong (MT) and Kan Yao (KY). Three methods of durian rind were used. 1 (TD-Tray Dry) 2 (SD-Stream Dry) and 3 (BD-Boil Dry). Chanee Monthong and Kan Yao Durian rind after drying and powdered process was found drying method 2 (SD-Stream Dry) to the highest yield of durian rind Kan Yao the second and the lowest durian rind is Monthong. The total weigh strain and shelf life of durian was affect to durian rind powder volume. Kan Yao is high volume of the white rind the second is Chanee and Monthong is lowest in white rind. The most total weigh of durian was affect to white durian rind in the other hand durian low total weigh was affect to white durian rind to the durian rind powder. Crude fiber is the mainly of chemical compositions of the three strain different durian rind. Cellulose and lignin as non-soluble dietary fiber. The soluble fiber found in durian rind is pectin. The quality of durian rind powder in Method 2 gave the lightest color followed by Method 3 for Method 1 to give the darkness color. Acidity of durian peel and durian rind powder acidic. The viscosity of durian rind is derived from pectin-a polysaccharide compound. For the communication of technology the potential development of durian rind flour powder at the Faculty of Home Economics Technology the participants were most satisfied in all aspects. Preparation of durian peel powder in all 3 ways there are parts that can not be powdered. In the next study. It is recommended to study the method to obtain powdered durian that cannot be powdered.

The research team has isolated the cellulase producing microorganisms which have capability in producing extracellular cellulase enzyme for cellulosic degradation from leftover agricultural waste materials such as fruits and vegetables. After cellulosic material degradation the products mainly were sugar moiety being the starting materials for further alcohol fermentation and/or possibly being used in cultivation of common microorganisms. In the study when different 49 bacterial isolates were tested for their cellulase activity on Carboxymethyl cellulose (CMC) two bacteria Bacillus spp. CE08 and 49 were selected due to high cellulase activity and thus tested for the physical and chemical properties. Their 16S rDNA sequence comparisons were close to Bacillus sp. isolate obtained from the soil. Both isolates are common aerobic/facultative aerobic bacteria with the length of 1-3 μm Gram positive and preferring the fermentation of maltose and xylose to glucose while minimal degradation on sucrose and lactose contents. Their optimum digestibility was at 40°C pH 4.5 for the broth having unpurified extracellular cellulase activity at 3-4 μg /mg. The enzyme could use the substrateCMC the best but rice straw more slowly but better than grass. However the enzyme displayed the least digestion effectiveness on cotton. Both of these isolates are expectedly applied in the biological degradation process substituting chemicals that cause pollution problems to the environment. Additionally this is one promise way to bring value of agricultural waste to the community.

The purposes of this research were to investigate the types of local foods of Praknamdaeng Community The potential of local wisdom of the community’s traditional foods in the aspect of raw material resources production process commercial production wisdom transfer in Praknamdaeng Community and Study knowledge of food ingredients method traditional food in Praknamdaeng Community. This research design was survey research conducted by in-depth interviews with 12 local food experts who have lived in six villages of Praknamdaeng Community. Two people per village were purposively selected. The research tools were interview forms a tape recorder and a camera. The data were analyzed by mean percentage and rating scales. The study revealed that 1. There are 132 types of local foods were found and classified into three groups namely main dish dessert as well as preserved and processed foods. 2. As for the potential in raw material resources two types of traditional foods were at a high level and in the aspect of the potential in production process all kinds of the foods were also at a high level preserved and processed foods .From the result of wisdom transfer all types of the foods were at a moderate level 3. As a result of the collection of the knowledge of food ingredients and cooking methods the commonly used meat to cook main dishes were found in the local areas and Meats such as Thai fish tilapia mullet sea catfish snapper mackerel shrimp shrimp shrimp crab sea crab etc. Vegetables such as vegetables vegetables sprout etc. Most sweeteners use coconut milk coconut sugar and sugar. Food preservation and food processing will use raw materials such as fish shrimp and use salt as an ingredient in preserving such as drying preserving by using salt etc. In addition the traditional cooking methods of the local in Praknamdaeng Community most of the red curry dishes are made from curry with local vegetables are used in the local cooking such as hot and sour soup with phak kom hin (Trianthema portulacastrum) hot and sour soup with cha-kram (seablite) hot and sour soup with phak plang (Bacella alba Linn.) hot and sour soup with sano (Sesbania javanica Mig.) flower kaeng liang (spicy herb soup) with phak kom hin (Trianthema portulacastrum) kaeng oom (dill soup) with nam pung do. Nowadays the ready-made curry paste which is available in the market is normally used. If any vegetables used were bitter salty or astringent they would be boiled before cooking. Most of the desserts such as khanom tom (Thai coconut munchkins) khuay buat chi (banana in sweet coconut milk) buat fak thong (pumpkin in sweet coconut milk) soft sweet sticky rice pudding with young coconut meat and tapioca pearl pudding with young coconut meat. There is no easy way to do that. Food preservation and processing were sun-dried fish and deep-fried marinated fish
