The development of Karanda Sundae-style set yogurt has the objectives to develop a formula for making Karanda yogurt and as a guide to the use of Karanda. To study the base formula of set yogurt and study amount of Karanda jam that is suitable for making Sundae-style yogurt and study the quality changing during yogurt storage at cold temperature (4ºC). From the results of the selection of basic formulas for set yogurt. It was found that the panelists liked yogurt which was prepared from 82 % pasteurized milk 9% skimmed milk powder 4.5% sugar and 4.5% plain yogurt. Next this selected yogurt recipe was developed to be a product of sundae-style set yogurt with Karanda jam. From sensory testing Karanda jam (65% Total soluble solids) at 15% of the total yogurt ingredients received a preference score of more than 10% and 20%. Karanda Sundae-style set yogurt has protein fat carbohydrate and fiber content 7.17 1.56 67.94 and 1.60% respectively. When stored at 4 ºC for 18 days Karanda Sundae-style set yogurt still maintains the good characteristics of set yogurt found a syneresis of whey and surface of the yogurt is slightly dry. The yogurt has a pH at 3.65 with a lactic acid content of 0.92% the amount of anthocyanin has changed slightly. And microbial quality still has the number of lactic acid bacteria in accordance with the standard criteria of the type of yogurt that still contains live microorganisms

The stability study of salad dressing products from rice berry broken rice is aimed to study the appropriate amount of vinegar of thick salad dressing from riceberry broken rice. Broken Riceberry rice is further developed by studying the stability by using different amounts of lecithin by soybean lecithin content of 0.15 % Then the physical quality was found that the thickened salad dressing from broken riceberry using soy lecithin was a stabilizing substance with reddish-brown color with brightness (L*) 39.34 ± 0.07 red color value (a*) 11.48 ± 0.04 and yellow value (b*) 5.56 + 0.53. Salad dressing has a soluble solids 33.17 + 0.29 (ºBrix) consistency of stabilization value is 11.48 ± 0.04 cm. pH 3.60 ± 0.01 and titratable acidity 0.43 ± 0.02 %. Proximate analysis is 52.01 % moisture 30.22 % carbohydrate14.86 % fat 2.12 % fiber and 0.79 % ash. During storage at 4 ºC for 4 weeks the total amount of microorganisms and yeasts is less than 10 colonies per gram which pass the requirements of the Community Product Standards. 672/2547.
การผลิตและคุณลักษณะของแบคทีเรียลเซลลูโลสที่ผลิตด้วย Acetobacter xylinum TISTR 978 จากน้ำคั้นเปลือกสับปะรด
This research studies the production of bacterial cellulose from Acetobacter xylinum TISTR 975 with pineapple peel juice a low cost carbon source and coconut water as nutrient and carbon source. The factors influencing the production were studied including incubation time type of carbon sources and ratio of mixed carbon sources. In addition the characteristics of the produced bacterial cellulose were investigated using Fourier Transform Infrared Spectrophotometer (FTIR) Scanning Electron Microscope (SEM) Thermogravimetric Analyzer (TGA) Differential Scanning Colorimeter (DSC) and x-ray Diffractometer (xRD). It was found that the coconut water produced the amount of bacterial cellulose higher than the pineapple peel juice with 10 days of production. An addition of the coconut water into the pineapple peel juice increased the amount of bacterial cellulose. The characteristics of two bacterial celluloses from two different sources were nearly similar but the one from the pineapple peel juice had higher impurities. It can be concluded that the pineapple shell extract could be used as low cost carbon source for bacterial cellulose production.
Production and characterization of carboxymethyl cellulose from orange rind
It is known that orange rind is often discarded as garbage. This research examines the production of carboxymethyl cellulose (CMC) from orange rind. Cellulose was extracted from orange rind (2.0 g) through alkalization. The cellulose was extracted using 1.0 M NaOH at 80 ± 5oC for 60 min. The maximum yield of cellulose was obtained under this condition. The extracted cellulose was then alkalized and etherified to CMC using NaOH and chloroacetic acid after bleaching with H2O2. The resulting CMC was characterized through Infrared spectroscopy to determine the functional group of CMC. The presence of carboxyl group (COO-) at a wavenumber of 1586 cm-1 in the IR spectrum confirmed the conversion of cellulose to CMC. The surface morphology was also carried out through the SEM technique and the elemental analysis was performed using an EDX method. In addition the resulting CMC product was coated as a film on banana to observe for various reactions.

The purpose of this research was to develop a short vocational training course on household chemical products and to develop a training course for shortterm vocational training in the production of household chemicals. Population groups Is a general public in Bangkok and metropolitan area by using the voluntary selection as follows. Trial of a short course on the production of household chemicals 10 participants. Evaluation of short courses in household chemical production 10 participants. Technology transfer the short-term training course on household chemical production 20 participants and five speakers. The tools used in the research are as follows: 1. Demand questionnaire 2. Short-term vocational training course 3. Satisfaction assessment. Data analysis using statistical software packages. The statistics used were mean ( X ) standard deviation (SD) and t-test. The research found that 1. Study and development of short courses in the production of household chemicals 1.1 selection of household chemicals that will lead to the creation of training courses based on components Where to buy Price per set Properties of components Safety and hazard Materials and equipment used for production storage use and distribution opportunities 1.2 Creating training courses training course components and training documents to have a sequence of steps that are easy and convenient for the learning of the general public 2. Trial of a short course on the production of household chemicals 2.1 Most trainees are satisfied with the short-term training program model as follows: Training procedures Training hours 1.30 hours per 1 course Short-term courses can be implemented and the curriculum can be used as a guideline for occupation at the highest level. As for the number of trainees four people per group per 1 course is at a high level. 2.2 Most of the trainees were satisfied with the speakers and short-term training.
