Developing stability of coconut milk ice-cream by banana flour
Developing stability of coconut milk ice-cream by banana flour

Banana flour (BF) was to use a stabilizer in coconut milk ice-cream (CMIC) in order to add value for Thai fruit; Banana. BF was varied at 4 levels as follows; 0.1 0.3 0.5 and 0.7%. Data from various treatments were analyzed using non-parametric test with the software. Mean and standard deviation were compared using The LSD based on sig at p value < 0.05. The panelists were accepted CMIC which use BF 0.5%. The physical specifications include stickiness 705.43?6.16 cps %Overrun 47.600.11 %solubility 25.50.12 at ambient temperature for 30 min pH 5.980.02 and total soluble solid 20.50.43. The chemical specifications include %protein 1.78 %fat 6.06 %carbohydrate 18.94 %moisture 72.76 %ash 0.46 and could be stored at -20 C for 3 days. CMIC was not found microorganisms that cause food to be rotten.

Probiotic is a micro organism that is useful for human bodies and can help creating balances for human intestinal system. The objective of this research is to compare amounts of fat substitutes supplied in the industries in order to determine their ability to encapsulate Probiotic microbes in the production of yoghurt ice cream to ensure maximum survived Probiotic microbes. In this research two fat substitutes Purity SM 100 and CRYSTAL texTM 648 were used to substitute skim milk in the standard formulas in order to study numbers of survived Probiotic microbes and to test the sensory acceptance. For the sensory acceptance it was found that the Probiotic yoghurt ice cream containing 20% Purity SM100 is acceptable at the maximum significance (p ≤ 0.05) because its flavor and taste was better than other samples as well as the best overrun with statistical significant differences (p ≤ 0.05). However by addition of both fat substitutes at different concentrations pH values of Probiotic yoghurt ice cream products did not have statistical significant differences (p ≥ 0.05). When Lactobacilluss acidophilus Bifidobacterium and Streptococcus thermophilus microbial starters were added into the Probiotic yoghurt ice cream using both fat substitutes in place of skim milk at ratios of 10% 15% and 20% respectively under a storage condition of -20oC for 4 weeks it was found that types and amounts of fat substitutes affected the surviving rate of Probiotic microbes in the product with a statistical significance (p ≤ 0.05). The addition of fat substitutes Purity SM100 and CRYSTAL texTM 648 at all concentration levels made Probiotic microbes survive in the product which illustrated that both fat substitutes used in above experiments could encapsulate Probiotic microbe cells. The survived Probiotic microbes were in the range of 108 – 109 CFU/ml in comparison to the Probiotic yoghurt ice cream with the standard formula without the addition of fat substitutes that has survived Probiotic microbes of only 106 CFU/ml.

Development of Sliced Breakfast and Ice Cream Cone From Khao Hom Nil
Development of Sliced Breakfast and Ice Cream Cone From Khao Hom Nil

Development Project of food products from khao Hom Nil for food industry aimed to conduct food processing which consisted of Khao Hom Nil sliced breakfast and Khao Hom Nil ice cream cone. As for Khao Hom Nil sliced breakfast Khao Hom Nil flour to corn flour ratio was 30:30 and it was the most accepted for all attributes. The product obtained was dry crispy but lower puffing capacity than other products sold in markets. It also gave higher nutritional value when compared to other instant breakfast in markets in that it gave high fiber. As for khao hom Nil ice cream cone powdered sugar to shortening ratio was 14%:10% and the product obtained was the most accepted. Determination of water activity and moisture content was at low level. This helped logn-shelf life food.
