Proteolysis and lipid oxidation during ‘mu som’ fermentation as affected by different ratios of white and black glutinous rice
Changes in muscle protein proteolysis and lipid oxidation of ‘Mu Som’ added with different white and black glutinous rice ratios (w:w) at 100:0 (W100) 75:25 (W75B25) 50:50 (W50B50) 25:75 (W25B75) and 0:100 (B100) during 72 h fermentation at 30°C were investigated. During 36 h fermentation B100 exhibited a higher rate of fermentation than others as indicated by lowered pH and lactic acid production (p<0.05). Due to higher acid production rate the proteolysis of muscle proteins as evidenced by the increase in trichloroacetic acid (TCA)-soluble peptides and smaller molecular weight of proteins appeared as electrophoresis were more pronounced. These might contributed to higher released water and expressible water as well as pale color. Higher black glutinous tice higher released water and expressible water were observed. The lipid oxidation in all samples was observed during fermentation. All samples had no difference in likeness scores of all attributes (p>0.05). From the results the ratio of white and black glutinous rice might contribute to proteolysis which effected on released water of Mu Som.

Elephant tourism is very famous in Thailand but it can pose difficulties regarding ethical issues from an animal welfare stand point. In order to address the problem it is important for marketers to have tourists understand the real meaning of elephant camp activities. With the goal of making the highest productivity use of marketing communication (MC) tools for elephant camp business the focus of this study is to examine the productivity from different kinds of MC tools and purchasing decisions of tourists in relation to Thai elephant camp’s services and products involving a case study of Ayutthaya Elephant Palace & Royal Kraal. This study employs qualitative method to cluster the data by in-dept interview from two administrators of the elephant camp 20 Thai tourists three foreign tourists and eight tourist guides. The results show a preference in order for purchasing the elephant camp’s services and products from public relations personal selling sale promotion and advertising respectively. In addition most of the key informants agree that mass media and social media are the most powerful MC tools. On the other hand advertising through brochure billboard and poster is less effective than other MC tools. Along with content marketing MC tool selecting is one of the important ways to turn Thailand’s elephant tourism into a more successful industry.

This investigation aims to developing a recipe for making Gleb-Lum-Duan (Thai shortbread cookies) with black sesame from gluten-free flour by determining the appropriate ratio of glutinous flour to rice flour. According to the results from sensory quality evaluation of 50 panelist who were ordinary people using the nine-point hedonic scale it was found that Gleb-Lum-Duan having the ratio of glutinous flour to rice flour as 40:60 had the highest acceptance rating among the tasters. The results from adding texturizing additives in the gluten-free Gleb-Lum-Duan showed that the tasters panelists gave the highest acceptance rating for Gleb-Lum-Duan which xanthan gum on flavor smell texture (fracturability) and overall preference. For the amount of black sesame added in gluten-free Gleb-Lum-Duan the panelist gave the highest acceptance rating for Gleb-Lum-Duan which included 20% black sesame based on color smell taste texture (fracturability) and overall preference. For color of product the L* a* and b* values were 68.83 0.09 and 6.97 respectively. Increasing the amount of black sesame resulted in increasing a* value and decreasing b* value. The amount of free water differed significantly (p≤0.05). Increasing the amount of black sesame was found to decrease hardness (p≤0.05). Gleb-Lum-Duan with black sesame from gluten-free flour included carbohydrates protein ash fat and moisture of 63.69% 3.01% 0.95% 31.19% and 1.16% respectively. A group of 100 ordinary consumers identified taste and nutritional value of gluten-free Gleb-Lum-Duan mixed black sesame as the most important factors

The purposes of this study were 1.The purpose is to study the consumption of noodles personnel Government Complex 80th December 5 2550. 2.To determine your satisfaction with the products of the noodle shops personnel Government Complex 80th December 5 2550. 3.To compare satisfaction with the products of the noodle shops personnel by sex age. Education level the average income per month sample used in the study. Customers noodle shop run by the Government Complex instruments used in the study was a questionnaire with the reliability ranged from 0.70 to 0.80. The statistics used to analyze the frequency percentage average standarddeviation and statistical t-test and F-test. Results found that consumers had a habit of consuming noodles. The factor affecting decision to consume any kind of noodles is the taste .The most popular type was pork noodles. Food most eaten with noodles were fresh vegetables. The number of people eating together was 4-6.The time most used for consumption was 11:01 - 13:00. The number of times consumed was 1-2 times per week. Each time most consumers consumed 1 bowl. Satisfaction difference were statistically significant at the 0.05 level by age and average income per month. Education did not affect difference in satisfaction.

The research aims to study the quality of Chaiya salted eggs coated with tea waste to partially replace soil from termite mound. The residue of tea waste dried to a moisture content of 14.9% was used to prepare salt coating paste. It was found that the mixture of coating paste by substitution of termite mound soil with 10% (w/w) tea waste was appropriate to coat the duck eggs. The salt content increased in both egg yolk and egg white with increasing salt coating time. Coating egg with 10% tea waste for 24 days egg yolk contained salt 0.83% moisture 17.04% and weighed 19.19 grams. The pH value and hardness were 6.43 and 93.67 gram respectively. The egg white contained salt 5.27% moisture 81.61% and pH value was 7.60. The salted boiled eggs coated by 10% tea waste treatment for 21 days were accepted by the panelists in terms of the overall liking with the level of much liking (8.67) not significantly different (p>0.05) from that of the control treatment (0% tea waste). Microorganisms in the salted boiled eggs did not excess Thai OTOP standard. A hundred general consumers accepted this product in terms of the overall liking with the level of much liking (8.00).
