Demand for knowledge development about administrative of the sub district administration organization in Phitsanulok Province
This study aims to survey the demand of the sub district administrative staffs in Phitsanulok province for self-development about administrative knowledge. The result showed that the essential knowledge for administration in the sub district administration organization requested via staffs was divided into 7 aspects. Knowledge development in financial accounting and taxation computer management profession education public health and environment was in the high level requirement whereas they have a medium level need for marketing knowledge improvement. Computer and the Internet were the highest requests. The follow was the knowledge about waste management. The effective and proper methods for knowledge development should be two day workshop in weekday (Monday to Friday) and the most available time was daytime (08:00–16:00). The speakers should be the government or public organization rather than private sector. The most proper total budgets (including food drink and documents) for workshop ranged from 500–1000 baht.
Effects of tomato lycopene on physicochemical and sensory properties of mayonnaise
The optimum formula for production of mayonnaise was developed with different on main ingredients (Formula 1; sweetened condensed milk and UHT milk formula 2; egg yolk formula 3; white egg). The effect of tomato lycopene added on physicochemical and sensory properties of mayonnaise was investigated. Physicochemical properties results on formula development were found that the formula 1 had the highest in TBA value and consistency. While formula 2 had the highest in total acidity a* and b* and formula 3 had the lowest in TBA a* and b* but the highest in L*. In addition sensory evaluations were not significant different (p > 0.05) between the 3 developed formulas. Thus the mayonnaise formula 1 was selected to investigate the effect of tomato lycopene levels (0 3 6 and 9%) on physicochemical properties. The results were found that lycopene content a* and b* increased with high level of tomato lycopene while the consistency value was decrease. Furthermore the levels of tomato lycopene were not effect on pH total acidity TBA and L*. Sensory evaluation revealed that the 6 and 9 % of tomato lycopene added had the highest on flavor. Thus mayonnaise supplemented with 6% of tomato lycopene was selected to study the storage at ambient temperature for 9 weeks. The results were found that total acidity TBA and consistency were not significant on during storage. However the pH TBA L* a* and b* was increase.
Physical properties and consumer acceptance on cotton ball cakes added color powder from carissa carandas l. mixed with maltodextrin
The objective of this research was to study the effects of the processing method on colorant powder from Carissa carandas L. mixed with maltodextrin 3 levels (10 13 and 16 %). The physical properties and consumer acceptance on cotton ball cakes added colorant powder from Carissa carandas L. mixed with all maltodextrin were added at 15% on flour weight. Results from physical properties of cotton ball cakes added colorant powder from Carissa carandas L. mixed with maltodextrin at 10 % was found that the lowest lightness. But also the cotton ball cakes added colorant powder from Carissa carandas L. mixed with maltodextrin at 16 % was exhibited the highest redness and yellowness (p< 0.05) and water activity range from 0.92 to 0.93 (p> 0.05). However the cotton ball cakes added colorant powder from Carissa carandas L. mixed with maltodextrin at 13 % was showed that the highest hardness and chewiness (p< 0.05). Furthermore the colorant powder from Carissa carandas L. mixed with maltodextrin at 10 % was found the lowest adhesiveness (p< 0.05). In addition sensorial evaluation was accepted overall liking score in range 7.63-7.80 (like moderately to like very much. The produce colorant powder from Carissa carandas L. was added maltodextrin from 10 to 16 % (w/w) on (p>0.05).
Problems and barriers for cooperative education student trainee recruitment according to the work place's concept. : a case study of undergraduates of business administration faculty, Rajamangala University of Technology Phra Nakhon
This abstract is aimed to study the problems and barriers in receiving the business administration students into co-operative education apprentice in accordance with the firms’ ideas on organizing and working processes qualifications knowledge and competence in the field of study. Population is the entrepreneurs or controllers who accept 180 fourth-year students of academic year 2255 to the internship programme. The data collection is using questionnaires. Statistics used in the data analysis are percentile means and stand deviation. The research results are as followed: 1. The problems and barriers on organizing and working process are at the high level. This implies that the firms are unable to coordinate with the institution to define and get the students ready before implementing.2. The problems and barriers on the qualifications of cooperative study students are at the high level. This implies that those students are unable to make decision to solve problems during internship. 3. The problems and barriers on knowledge and competence in their fields of study are at the high level. This implies that students are unable to communicate well both verbally and alphabetically in Thai and foreign languages.
Effect of beetroot pulp added on physical properties and acceptability of muffin
The objective of this research was to determine the optimal ratio of beetroot pulp to produce American muffin. The experimental arrangement in CRD was used to study the effect of ratio of beetroot pulp at 0 % 5% 10% and 15% of total weight on the quality of product. As beetroot pulp increase L* and b* of sample decreased were observed (p<0.05) while beetroot pulp decrease a* of sample increased were observed (p<0.05). For textural properties higher in beetroot pulp added showed notably decreased in hardness and cohesiveness (p<0.05) and increased in springiness (p<0.05). At 10% of beetroot pulp to produce American muffin by 9-point hedonic composed of 26.66 % moisture 24.63 % protein 11.43 % lipid 1.40 % ash 0.92 % crude fiber 1.34 % insoluble dietary fiber and 55.88 % total carbohydrate 344.91 Kcal. of total energy 102.87 Kcal. of energy from fat and increase of anthocyanin 0.37 %.
