Color improvement of red swordtail fish by betalain extracted from dragon fruit peel
Color improvement of red swordtail fish by betalain extracted from dragon fruit peel

The colors improvement; lightness (L*) redness (a*) and yellowness (b*) in red swordtail fish by betalain (BTL) extracted from dragon fruit peel were evaluated. The fish were feed by commercial dietary pellet which spray with BTL; 0 40 and 60 milligrams/kilogram. After 8 weeks the average of L* a* and b* values of every treatment were not statistical significant (p>0.05) those might be cause from spirulina sp. added in commercial feed. The treatments were feed by 40 and 60 milligram/kilogram showed higher tendency of average L* a* and b* than 0 milligram/kilogram. The growth rate of every treatment were not statistical significant (p>0.05) and the survival rate of BTL intake groups were higher than without BTL. So BTL were not growth inhibit substance. In the other hands BTL might be the natural immune stimulation substance.

Quality changes of nile tilapia fillets dipped in phosphate solution and coated with chitosan kept in refrigerated storage
Quality changes of nile tilapia fillets dipped in phosphate solution and coated with chitosan kept in refrigerated storage

Dipping of Nile Tilapia (Oreochromis niloticus) fillets in the mixture solution of 2.0% sodium pyrophosphate and 0.5%sodium triphosphate and coating with 0.00.30.60.9 % chitosan solutions drained packed in polyethylene bags well sealed stored at 4๐C for 15 days were evaluated. The results showed the moisture of all sample did not statistically difference and quite constant during storage. The pH and TVB-N value increased with the storage period for all sample Coating with low concentration of chitosan resulted in lower pH fillets than higher concentration. The decreasing of pH resulted in decreasing of Water Holding Capacity (WHC) of the fillets. Increasing chitosan concentration increased pH and WHC. The oxidation of the samples revealed that the Thiobarbituric acid(TBA) of 0.3% chitosan was maximum and lower with increasing of chitosan concentration. Increasing of TBA may be because of acidity of chitosan solution activated fat hydrolysis. Nevertheless chitosan coating effectively inhibited growth of microorganism in the fillets.

Processing of fish tofu product from fresh water fish in bo-klue district, nan Province
Processing of fish tofu product from fresh water fish in bo-klue district, nan Province

The research aimed to study the processing of fish tofu from fresh water fish such as Pla Pluang Hin (Neolissochilus stracheyi) Pla Jad (Hypsibarbus malcolmi) and Pla Mum (Scanphiodonichthys acanthopterus) that are usually found in Bo-klue district Nan province. These three fresh water fish tofu were compared with tofu from Threadfin bream (Nemipterus hexodon) that was a commercial raw material of fish tofu. The fish tofus were experimented on 1) physical attributes 2) chemical compositions and 3) sensory preference. The physical attributes of color size amount of air bubble and firmness were studied. The results showed that lightness (L) of tofu from Pla Pluang Hin and Pla Jad was higher than Pla Mum and Threadfin bream. Threadfin bream tofu showed the highest redness (a*). There was not difference in the yellowness (b*) of all fish tofu. The sizes of the air bubbles in four fish tofu products were between 1.3 to 1.6 mm. which was 80% of air bubble amounts found in a square centimeter. The firmness of all fresh water fish tofu was lower than Threadfin bream tofu. The Percentage of moisture ash fat and protein contents were between 74.2 to 75.7 2.1 to 3.2 0.5 to 3.6 and 21.1 to 25.5 percent respectively. The sensory attribute acceptance of three types fresh water fish tofu were not significant to Threadfin bream tofu. The products were accepted at level of moderate to high preference.

Larval and juvenile fish assemblages in constructed breakwater sandy beach
Larval and juvenile fish assemblages in constructed breakwater sandy beach

To determine the impact of breakwater construction on fish assemblages larval and juvenile fishes were used to interpretation. The study was conducted in the inter-tidal zone constructed breakwater and natural sandy habitats of Pakmeng Beach at Sikao District Trang Province. The morphology of water bottom showed that differ between the front areas of breakwater construction and natural beach. The bottom profiles at in front of natural beach is seem to be deep immediately from shore and connect to a flat sand dune whereas in front of breakwater construction area was shallow and flatten. Fish assemblage data had showed the average number of larval and juvenile fishes no differ between the two habitats whereas the number of taxa of juvenile fishes was higher significantly in the inter-tidal zone of breakwater constructed area (Mann-Whitney U=11.5 p=0.017) Even though our study have revealed the application of fish assemblage data to asses the impact of constructed breakwater. Current study have limited on data collection not entire seasonal of larval and juvenile fishes abundance. Using our interpretations in other study sites is necessary to collected more frequency both beach morphological and fish assemblage changes.

Drying of ground fish slices using superheated steam
Drying of ground fish slices using superheated steam

Superheated steam drying has gained more attention due to its absence of oxidative reactions and high drying rate. This research involved drying of ground fish slices using superheated steam. The influences of superheated steam temperature (120 130 and 140 ?C) and thickness of ground fish slices (1.3 and 2.2 mm) on drying kinetics and quality attributes of dried fish slices were studied. Effective moisture diffusion coefficients (Deff) of the ground fish slices dried at different conditions were also investigated. From the experimental results it was seen that an increase in drying temperature and a decrease in thickness of ground fish slices led to faster moisture reduction. In terms of qualities it was found that the lightness value (L-value) decreased. However the redness value (a-value) percentage of shrinkage hardness and toughness values increased when the thickness of ground fish slices and superheated steam temperature increased. Moreover it was also found that the Deff of the ground fish slices increased with the increase of superheated steam temperature and thickness of ground fish slice.
