This research aims to study the base formulation of Pad Thai noodle to study on type and quantity of modified starch in Instant Pad-Thai noodle. To study on the amount of Pad Thai sauce to supplement in Pad Thai noodle. To study on the quality of Instant Pad Thai noodle with Pad Thai source to design the optimal packaging for Instant Pad Thai noodle and to study of consumers acceptance of Instant Pad-Thai noodle with Pad Thai source. The results of this study showed that the optimal formula of Pad Thai noodle was 80 grams of rice starch 100 grams of tapioca and 300 grams of water. The color values of L * (brightness) a * (red) and b * (Yellow) was 64.13 ± 0.01 -0.92 ± 0.02 and 14.52 ± 0.02 respectively. This Pad-Thai noodle has a slightly yellowish white color with a moisture content of 5.31 ± 0.03 %. The optimum amount of modified starch used in the semi-finished fried Thai noodle formula by replacing the tapioca starch in the basic formula was modified starch 30 per 70 grams of tapioca starch. The modified formula of Pad Thai noodle has a slightly yellowish white color with L * (brightness) a * (red) and b * (yellow) equal to 62.82 ± 0.01 -1.10 ± 0.01 13.45 ± 0.01 respectively with a moisture content of 5.66 ± 0.11 %. The amount of Thai stir-fried sauce used in the semi-finished fried Thai noodle recipe by replacing the amount of water in the recipe was 80 grams of rice flour 70 grams of tapioca flour 30 grams of modified flour and 100 grams of Thai stir-fried sauce and 200 grams of water. The color of modified Pad-Thai noodle was L * (brightness) a * (red) and b * (yellow) equal to 43.67 ± 0.01 8.25 ± 0.02 and 22.42 ± 0.10 respectively with moisture content of 2.58 ± 1.36 %. The number of microorganisms was less than 10 CFU/g. The amount of yeast and mold was less than 10 CFU/g and E. coli content was less than 3 MPN /g. The aims of research were to study (1) a basic formula of rice noodles’ production. (2) the production of jobs tears flour and rice flour in rice noodles’ production. (3) the quantities of using jobs tears substituting for rice flour in noodles’ production. And (4) consumers’ acceptance of rice noodles product from jobs tears flour. The results showed that the first formula was chosen to be the basic formula. This formulation containing 10% rice flour 3% tapioca flour 26% water and 0.5% vegetable oil. The results of physical qualification between jobs tears flour and rice flour showed that the lightness (L) of jobs tears flour lower than the lightness (L) of rice flour (p≤0.05). And the value (a*) showed redness and the value (b*) showed yellowness higher than rice flour (p≤0.05). Humidity and water activity (aw) of general rice flour is not different from jobs tears flour considered by sensory test with ratio of jobs tears flour to rice flour of 20:80. This ratio got more preference the ratio 40:60 and 60:40 (p≤0.05). According to the consumer test (100 consumers) the Noodles by Partially Substituting Rice Flour with Jobs tears Flour was accepted as the novel and delicious product by 98% consumers. Moreover and 92% of consumers decided to buy the product containing 250 g in the plastic bag with the price of 25 Baht.

Spaghetti was a pasta product and one of the popular foods that had the value of main nutrition as carbohydrate and protein. The research was studied production of fresh spaghetti by addition of seablite leaves. The study on optimum amount of boiled seablite leaves and dried seablite leaves found that supplementation with increasing quantity of boiled seablite leaves had results about the quality of fresh spaghetti by addition of boiled seablite leaves and dried seablite leaves which the quality had statistically significant difference at the 0.05 level (p≤0.05). By addition with increasing quantity of boiled seablite leaves and dried seablite leaves that had increasingly resulted in color as green spaghetti (p≤0.05) and toughness and elasticity of texture of fresh spaghetti had decreased with statistically significant level at 0.05 (p≤0.05). Testing on sensation found that the testers had tasted to vote the most of sensation fondness as addition of boiled seablite leaves at 20 percent and addition of dried seablite leaves at 2 percent by weight of all ingredients (p≤0.05) and had studied of change on storage period that selected a fresh spaghetti by addition of dried seablite leaves to preserve fresh spaghetti could store in plastic bag of 7 degree Celsius and quality of the fresh spaghetti had preserved for 3 days that kept in physical quality. The consumer had accepted by the penchant of less to the highest level at 100 percent and they interested the product at sale price of 75 baht per serving.

The Research Shelf Life Extension of Kanom Jeen by Using Modified Atmosphere Packaging for Increasing the Competitiveness for Commercial: Case Study of Thap Luang Company. Study the use of modified conditions for extending the life of fermented rice noodle By using filling techniques under atmospheric conditions Divided into 7 levels which are normal conditions vacuum (vacuum) nitrogen gas (N2) 100 percent carbon dioxide (CO2) 100 percent nitrogen gas per carbon dioxide (N2: CO2) all 3 levels which are 60 percent. : 40 70:30 and 80:20 then to study the storage life of each condition from 0-15 and compare the physical properties Chemical and microorganisms such as pH value color measurement and total number of microorganisms found that Khanom Jeen noodles stored in modified atmosphere conditions have longer shelf life than those stored. At normal atmospheric conditions and vacuum conditions. Chemical analysis results show that ready-to-consume fermented rice noodle flour in all atmospheric modification conditions decreases pH over time. With values between 4.31 ± 0.00 to 2.99 ± 0.01 and fermented rice noodle flour stored at atmosphere modified with 100% carbon dioxide (CO2) gas packed in a sealed nylon / PET vacuum plastic bag. Store at room temperature. Can be stored for up to 12 days and found that the total number of microbes increased when the shelf life is longer but not exceeding the standard of community products (PhorChor. 500/2547 Knmhin) so the products are safe and not harmful to consumers. Consumer test results show that consumers like and are interested in buying Khanom Jeen products that use 100 percent carbon dioxide (CO2) at 75 percent.
