การพัฒนาผลิตภัณฑ์หมูยอเห็ด(ทดแทนไขมันสัตว์)ทอดกรอบ
The purpose of this study was developing formula and prototype of mushroom in Moo Yaw chips for food production. The mushroom could be used as fat replacer in meat products 100%. The products have water holding capacity emulsion stability. The suitable condition for Moo Yaw chips as thickness of 1.5 mm. after that bake with oven at 60 ๐C 3 hours deep-fat-frying at 140 ๐C 3 second then bake with oven at 60 ๐C 15 mins and mix seasoning 10% for delicious. The result showed that physical and chemical analysis of Moo Yaw chips as follows : Hardness value 3.93 ± 0.22 N. Cripyness value 6.40 ± 2.70 aw value 0.33 ± 0.20 L* a* b* value 32.27± 0.82 18.29 ± 0.43 and 22.86 ± 1.57 respectively. Product have brown dark color. The percentage of moisture protein fat crude fiber ash and carbohydrate content 3.91 ±0.06 24.72 ± 0.06 29.53 ± 0.07 6.27 ± 0.17 7.80 ± 0.17 and 27.83 ± 0.17 respective. The proximate analysis of moisture content lees than formula control while protein content and ash content more than formula control. Moo Yaw chips have shelf life at least 2 months and consumer acceptability like moderately product.
Effect of pre-treatment on quality of cassava chips
This research was to look at cassava root as an alternative raw material for snack chip production. However cassava chips showed higher hardness compared to potato chips. The aim was to study the effect of pre-treatment on the physical chemical and sensorial characteristics of cassava chips. Fresh cassava slices (1 mm thickness) were soaked in sodium bicarbonate (NaHCO3) solution at different concentrations (un-soaked 0 1 and 2% w/w) for 5 min. Then cassava slices were fried in palm oil at 160ºC for 4 min and were seasoned with paprika powder before being baked at 180ºC for 10 min. The chemical physical and sensorial qualities were investigated. The results revealed that the bulk density of cassava chips decreased significantly from 0.496 to 0.401 g/cm3 when fresh cassava slices were soaked in 2% NaHCO3. The breaking force of cassava chips also decreased from 558.97 to 231.50 g whereas fat content increased from 22.85 to 30.69% when soaked in 2% NaHCO3. Increasing the concentration of NaHCO3 decreased the lightness (L*) of cassava chips. Pre-treatment did not have a significant effect on the sensory scores of cassava chips.
การพัฒนาผลิตภัณฑ์หน่อไม้แผ่นปรุงรสทอดกรอบ
The objective of this study was to investigate the appropriate formulas and methods for the production of bamboo shoots. Total Method 3 was used to study the optimum amount of wheat flour at the concentrations of 5 10 and 15 percent. The tasting parameters of wheat flour were 15 percent. (Framing) and overall liking. Then a suitable amount of baking powder was added in the amount of 1 2 and 3 percent. The average leaf color flavor taste texture and overall preference were 7.50±1.14 7.67±0.80 7.77±0.86 7.57±0.97 and 7.97±0.67 respectively. Physical quality was found to be 52.42±0.02 L* 19.60±0.04 a* and 31.23±0.02 b*. The value of aw was 0.42±0.01. The crispness was 5.33±0.58. The hardness was 5.93±0.11. Based on the chemical quality survey it was found that moisture content was 2 . 2 7 ±0.77 protein content was 12.48±0.00 fat content was 22.47±1.72 the fiber content was 5 . 4 7 ±1.21 the ash content was 7 . 2 8±0.12 and the carbohydrate content was 50.02±0.00 packed in foil aluminum foil bags. With desiccant Preserved at room temperature for 6 weeks moisture content aw values color and texture were analyzed. Moisture content and aw values decrease and result in color values. Slow change the texture decreased slightly. But the product is still framed.

This research was developed from the old version of the banana slicing machine for slices a banana in sheet-form longitudinal axis only by designed constructed and tested a new version of the banana slicing machine for slices a banana in sheet-form longitudinal and horizontal axis in flat-shape and curly-shape and adjustable sheet-thickness at between 1-2 mm. The new version of the machine would consist of a pressure plate over the feeding channel. The feeding channel could support for 5 fruits of a banana in the longitudinal laying and support for 10 fruits in the horizontal laying. The blade was installed on a drum and the tray was inserted under the drum for finished products. Electric gear-motor was used to drive the drum. The overall dimensions of the machine ware 0.56m (width) 0.64m (Length) 1.38m (High). The experimental was sliced by the machine at 1.5 mm thick in flat-shape and curly-shape can be summarized; the average rate of slide was 167 kg/hr. The average tolerances of sliced was ±0.02 mm the average deviations percentage of sliced was ±1.05 and the average power consumption of the machine was 0.23 kWh. The machines were used by targeted communities with production costs of about 4.78 million baht/year will lead a net profit to 5.97 million baht/year and the payback period of about 0.82 years.
