Bread is a bakery product with low moisture content. It have a hard and sticky texture that cause difficult to eat. Therefore in the present study the effect of gelatinized starch (wheat corn rice tapioca and glutinous starch) to improve of bread quality was determined. Starch were gelatinized and added as bread ingredients. Gelatinized starch influenced the quality of bread. The bread obtained gelatinized starch with high specific volume and moisture content but low density (p≤0.05). Sensory evaluation showed that the bread which contained from gelatinized tapioca starch obtained highest score especially texture and overall acceptance from the panelists. Tapioca gel has been used as texture improving agent in bead. The effect of tapioca gel on the quality of bread were determined. The tapioca gel (0 20 30 40 and 50% of wheat starch) was used in the formulation of the bread. Increasing tapioca gel improved specific volume moisture content density and sensory quality (p≤0.05); however these quality were deteriorated as add tapioca gel up to 50% (p≤0.05).

“Usage of Luo Han Guo instead Coconut Sugar in Kgawyaco milk Gelatin Product” Objective To determine the usage Kgawyaco milk as coconut milk substitutes of Kgawyaco milk jelly Amounts of three different levels: 40 60 and 80 percent of all coconut milk . And to determine the appropriate amount of Luo Han Guo used to replace sugar and Kgawyaco milk jelatin . Amounts of three different levels: 15 20 and 25 percent by weight of coconut sugar. The experiment follows the Randomized complete Block design (RCBD) principle. The quality of senses; color smell criteria taste texture and overall appreciation were evaluated and given up to 9- point hedonic scale by 80 experimenters. The average was computed and the variance was analyzed by ANOVA at the 0.05 confidence intervals and the difference of averages were examined by Least Significant Difference test through the prefabricated program. The results sensory evaluation of using coconut milk instead of jelly custard Kgawyaco panelists recognized at the level of 60% in the appearance color odor taste texture and overall liking averaged 7.72 and 8.51 8.05 8.02 8.03 8.10 respectively. Analysis of variance and compared differences are statistically at 0.05. Evaluated sensory of use Luo Han Guo substitutes coconut sugar of jelly milk Kgawyaco panelists recognized at 15 in appearance color taste and texture with an average 7.81 7.72 7.71 and 7.46. respectively analysis of variance and compared difference of smell texture and overall are statistically at 0.05.

This special project aimed to determine the appropriate procedure for extending carved dye radish (CDR) and study the type for coating CDR. From the results radish was carved become to rose shape and immersed in peroxyacetic acid 0.08% and calcium choride 1.5% after that was immersed in food dye solution such as blue 0.01% 0.05% and pink 0.01% 0.05%. Then CDR was coated in three types of coating namely xanthangum gelatin and agar. From the result xanthangum has weight loss yield% firmness and color value more than galatin and agar. CDR with blue 0.01% has weight loss yield% 3.24 firmness 3.12 N color value L* 55.09±0.04 a* -20.52±0.07 b* -15.93±0.57 blue 0.05% has weight loss yield% 3.24 firmness 26.01 N color value L* 45.54±0.03 a* -25.70±0.20 b* -26.85±-0.29 pink 0.01% has weight loss yield% 3.09 firmness 23.99 N color value L* 55.03±0.11 a* 29.42±0.05 b* -0.39±0.24 and pink 0.05% has weight loss yield% 3.27 firmness 24.41 N color value L* 45.08±0.07 a* 39.75±0.27 b* 0.30±0.16. The carved radish with blue and pink storage in plastic box stored in aluminum foil at 3-4 ๐C were during 5 days. Microorganism indicated that there were no more than 1×106 colonies per 1 g of sample.
